Love your meal!!! Mother Always made our gravy that way. But I started to change my way to make it. I use cornstarch instead, no need to cook it. I usually put the good stuff in the bottom of the pan into a deep sauce pan, add about 2 cups of water or broth, mix my cornstarch with a bit of cold water, heat up the pot to a boil, shut the burner down to a low simmer and whisk in the cornstarch slurry. Whisk til it starts to blip. Change to a spoon so it doesn't stick and season to taste. Had to change this way after I found out I have congestive heart failure.

Excellent meal! Do you remember, when we were growing up, that all pork chops had a bone attached. Now, it’s hard to find. It’s become something ,that the chefs on TV, talk about. They talk about the added flavor there is, by having a bone attached. I always look for it, but it’s hard to find. Most cuts, these days, do not have that attached bone. Evidently, the price is higher for pork chops, with bones, nowadays. The food we grew up on, has become a favorite of food connoisseurs. Now, everybody is eating collard greens. Thanks for sharing. Stay blessed.

I guess it depends on the population of the area, where you live. I’m in a metropolitan area, where there are plenty of grocery stores. But, if you work, and go to the store in the afternoons, they run out of things, or items haven’t been replenished.
