Try frying the potato with the mixture of mustard, cumin, curry leaves, onion and then mixing the poha (flatten rice). I know the kids don't like spicyness but definitely add 1 or 2 green chillies and top it of with grated coconut and lemon. You are absolutely going to LOVE IT. And also try दडपे पोहे (Dadpe Pohe) - just flatten rice (sprinkled with bit of water so that the rice is not completely soaked and is bit crispy, but not dry), fried mustard, bit of green chilly, grated coconut, salt, pinch of sugar. No turmeric.

Since you all liked Pohe ( Maharashtrian most famous breakfast), you can try two different versions of Pohe made at a typical maharashtrian homes. They are Dadpe Pohe & Dahi Pohe (Curd Pohe). Both of these types are cooked at Marathi homes but not available as street food and in restaurants. Both these variations are much more healthier versions of Pohe because they use very less oil and are totally non spicy. Plus they are much quicker to make than Standard Poha which you made at home and enjoyed. Try out these two different variations of standard pohe, which are only made at Marathi homes and loved a lot. I am sure both Malaika and Liam as well as both of you would love these healthier versions of standard Poha. You can search you tube for recipes of these two variations i.e. Dadpe Pohe and Dahi Pohe (Curd Pohe). If you like it and if you make any of them then try to post a video while making so that we can enjoy watching it and also cheer ourselves by seeing a always cheerful, happy and smiling family of yours.

Love ur Family and Channel… Being from Mumbai, will give you my personal tips: 1. Cook in organic peanut oil or even organic coconut oil bcz ghee changes flavor profile. 2. Use bit of white pepper powder instead of green chili for mildest effect. 3. Squeeze lemon while serving. Will make the difference! 4. Add pinch of sugar to balance salty flavor while cooking. 5. Kande pohe means Onion poha so potato is optional. Few People also add boiled peas. Cut into thin small cubes and Cook the potatoes with onion to brown them together instead of frying. Will get more taste too. 6. In Indore city, people even add crispy fine sev on top for crunchy effect along with pomegranate.

Liam is exactly right. Exclude peanuts or replace them with soaked and roasted udad dal, replace poha with boiled diced potato, and that's authentic alu jira. Nothing more, nothing less. Of course, chillies are optional, but almost always added. And apart from potato, you can add any vegetables in poha. Only remember to add a single vegetable, don't make it crowded. Eggplant, coli flower, snake gourd, sponge gourd, anything goes 😊 By the way, 4 out of five marathi people will, at their home, fight for the delicious piece of bottom caramelized layer (it's got a name in our language - Kharpudi 😊), but if that's served to a guest, especially unintentionally or unbeknownst to the guest, you have officially served "burnt dish". 😅😂

Very well done! It is the most basic type of morning snack and a popular one in Maharashtra, Madhya Pradesh region. It is also the quickest one, prepared in 5-10 minutes. Few things to mention here. 1. We don't use cumin seeds and hing (asafoetida) in poha. We use only mustard seeds. 2. This one you can take as a general rule for all Indian dishes: The chili pepper, curry leaves, whole spices, that are used in tadka (temper), are for their aromatic flavor. Unless it is in paste or powder form, you are not supposed to eat those. While eating just remove those things from your dish. So go ahead and add a chili in poha. It will taste better. You can adjust it's intensity by cutting the chili into 2 or 3 pieces. More the pieces, hotter the taste. To start with, I'd recommend using one whole chili pepper without cutting, in tadka. Remove it before serving. 3. After soaking, the poha flakes become delicate. So do not keep mixing those again and again. It will break the flakes. Once you add it to tadka, mix it till all flakes become yellow. After that you have to be very gentle while mixing. 4. In a very basic poha dish, you don't add onion or potato. It's just tadka of mustard seeds, curry leaves, chili pepper, turmeric. Add poha. Mix and cook it. Then add salt & pinch of sugar. That's it! Things you can add are: onions, potatoes, tomatoes, green peas, peanuts. Onions & peanuts you did it right. Potatoes are not to be fried, but cooked in the tadka itself before adding poha. Cut into either cubes, or small slices so that it cooks quickly. Tomatoes can be cut just like the onion. The ratio of all these vegetables with poha can be 1:3 i.e. any or all these vegetables one part and three parts of poha. Peanuts are like love. More the merrier 😂 5. I'm not sure how would it taste with jaggery, but the proportion for sugar was right. You can add two pinches if your kids prefer sweeter taste. 6. Once cooked, squeeze a quarter of lemon for this much quantity. 7. Garnishing items: Finely chopped coriander, fresh grated coconut, fresh grated carrot, zero number shev (nylon sev), farsan, aloo bhujiya, tarri (hot spicy curry), etc. If you want to try, there are few more variations of poha recipes. 1. Dadpe Pohe Same ingredients & tadka. Just that the poha and vegetables are used uncooked. Here the main taste is of lemon juice+salt+sugar (sweet & sour). Use very finely chopped onion, tomato, cucumber, cabbage, fresh grated carrot. Fresh grated coconut is a must. 2. Dahi Pohe Similar recipe like Dadpe Pohe. Just addition of urad dal in tadka. And replace vegetables with curd. Soaked poha (uncooked) is mixed with curd. Tadka is done separately and then added to poha. This one is good for summers. 3. Kolache Pohe This is the speciality of Konkan region, you are living in right now. It requires tamarind & coconut milk. Same like Dahi Pohe. Replace curd with coconut milk & tamarind paste. Also add crushed Mirgund for better taste. Poha Mirgund is red colored & square shaped papad of poha. You will need to deep fry it.

In my house it is served with topping of freshly grated coconut and coriander. And as suggested by others below, adding a bit of crunch on top with farsan/zero sev/ ratlam sev will make it fun. This can be eaten anytime - breakfast, lunch, evening snack or light dinner. But mostly eaten for breakfast. We grind 1 chilly+ clove of garlic and add it to the tadka/tempuring..just after adding the राई/मोहरी/सरसों के बीज/mustard seeds and cummin. That way you can get the light kick but doesn't become too spicy. You can dry roast lightly your whole spices such as cummin seeds, coriander seeds and carrom (ajwain) seeds in advance and store it in a air tight container. They last longer. You can light roast rava (semolina) as well as it helps in storing for a long time. Happy cooking and your journey through India
