These two Finale episodes have ended very strangely. The scores are given at the end in about 2 seconds with no discussion or commentary. I would think there would be a quick reveal of the scores, a final commentary by the judges as to which dish was their favorite, and reaction from the normals. The lack of any follow up is just weird. 🤔

So after 2.5 years of ultimate chef skills challenges - Barry doesn't know how to work a pressure cooker, Jamie broke Kush's knife while shucking oysters, and Mike is frying chicken. 🙃 Jokes aside, you can see in these videos just how far they've come. As delightful as it is to watch our favorite normals cook and banter with each other, watching the chefs talk about the dishes is a pleasure. All the chefs had so much to comment about - be it the technique, the flavour pairings, the plating - it wasn't like they just said, oh it's good, or Oh it's bad. Every dish had its good points and bad points and that's what makes this so exciting to watch. I'm really proud of all the boys irrespective of who wins this. Personally, I still think Barry's gonna win this. The last time they did something even close to a long term battle like this was the brownie points, and I think the memories of the shark's cage, the popsicle in the winter, and the fermented herring are pushing him to go all out, play to his strengths and really give his all here.

Recently made a butter chicken sandwich. Made the butter sauce (general ingredients: cashews, onion, tomatoes, garlic, ginger, tandoori masala, butter, chicken broth), saved half. To the other half I added some milk, some more spices, the chicken and more salt (1% of the weight of the chicken). It marinated overnight, and in the morning I set it in the flour mixture ( 4 parts ap flour 1 part potato starch 1 part cornstarch, seasoned with salt, pepper, hot chili powder and tandoori masala). Let sit for 4-6 hrs. Sepparate the reserved sauce into halves again. To ½ add milk til watery. Preheat high temp frying oil to 185°C. Set up a baking tray or plate with paper towels. Pass every piece of chicken briefly through this dredge (it should be a thin coating) and return to the flour mixture, coat in its entirity + shake off excess. Fry each piece til done 2 at a time, 3 at most ( check with thermometer) ~6 min breast, ~ 8 min thighs. Drain + season while oil comes back to temp. When done with ¾, butter bread + toast. *I like to toast in the oven @180°C that way I can keep @ temp the chicken I've already fried.* As for the sandwich construction, a small dollop of butter sauce in bottom, japanese pickled red cabbage, chicken, dollop of sauce, pickled red onion, onion sprouts and on the top bun, mustard of choice, and butter sauce (sour pickle slices optional).

I know we have more more video to go, but this full course competition is amazing, personally I'd love if the Sous Chef title was up for grabs every year. if that were to happen, some changes that could be made, have Kush or other members of the team essentially act as the servers bringing out the dishes, meaning the normals will have to have what they're going for on note cards ahead of time so the servers know what they're presenting (and if there are questions) and have them go from making 1 dish to the next (still split up between 3 videos in a way, but this way they can be working on multiple dishes at a time. alternatively, and I don't think this would work for this, but would just be fun to see as a different competition, each normal creates a menu featuring dishes that presumably they feel confident making, (though I feel a few dishes that they don't feel confident in will slip through) the judges can then select what they're getting at each course. from here, this kind of splits off depending on how you feel it'd best be presented, option 1: 1 judge at a time, so the normals still only need to focus on 1 dish at a time, or option 2: all the judges order something at the same time, meaning the normals are working on multiple dishes at a time. I would imagine for this format it'd only be 1 normal in the kitchen at a time so they have the space to work, whereas in option 1 so long as it was planned properly, could still have all 3 in the kitchen at the same time.

This is shaping up to be an interesting finale and honestly anyone can win this as there is only a 1.5 point difference between first and last right now, so it all comes down to desert. Assuming cumulative point totals: Mike is in 3rd place with 41.5 points, Jamie is in second with 41.6 points, and Barry is in 1st place with 43 points. It is still very much anyone's game to win (or lose depending on your point of view). I also would like to point out that based on the scores given Poppy(avg score given of 8) is the most generous with points while Franck(avg score given of 5.8) is the least while Philli(avg score given of 7.2) is in the middle. Personally, I am excited to see how this shapes up and it will certainly be interesting to watch; though, all three of them should be immensely proud of themselves as to how far they have come as home cooks and frankly all three of them have earned the ability to call themselves home chefs and not just Normals regardless of who wins this challenge.
