I used your method. The only issue I had was I asked the butcher to cut me 3 bone in rib eyes, 1-1/2” thick. He gave them to me already rapped up. They felt very heavy. When I got home and opened them, they were 2-1/4” thick. So, I had to leave it in the oven for 11 minutes to get the 130 degrees and I used Kosmos Q Cow Cover HOT BBQ Rub and at the end under low heat the thyme, rosemary and 3 garlic cloves, lots of butter. Also, I’ve never preheated my cast iron in the oven, again a perfect idea. Absolutely delicious!! Thanks

I pan-fry all of my steaks! I like to sautee some mushrooms on the side while I'm waiting for the steak to rest. It's a great combo! Another of my favorite sides is to cut the florettes off of about 1/2 head of cauliflower or a couple of good sized bunches of broccoli, put them in an appropriate-sized covered bowl with about a 1/4 cup of water and steam them in the microwave for about 5 mins. They come out great without all the nutrients cooked out of them. Finish with some butter, salt and pepper and you're good to go...

I like the preheat Skillet in the Oven advise. Gonna try that on my next one. A steak that thick and fine I'd Dry Brine it first at least 48 hours. If ya don't know what that is. It's when you salt the steak nice and evenly and let it sit in the fridge. The salt draws out moisture, the salt melts, the steak reabsorbs the moisture and salt, and more evenly seasons the steak all the way through. It is just phenomenal I'm like what have I been doing with my life up to this point.
