Set oven to 450 F - both to preheat the cast iron and to cook the steak after the sear
Talk about "upper crust" cooking -- this classic pan-seared ribeye steak recipe results in a juicy, tender steak with a super flavorful crust. You don't need a grill to get a great sear on your favorite steak. Grab your cast iron skillet and create a mouthwatering steak that will have your taste buds tingling. Here's how!
Get the recipe: www.certifieda...
Ingredients:
1 (16-ounce) Certified Angus Beef ® ribeye steak
LE CREUSET cast iron signature skillet
1 teaspoon peanut or canola oil
1/2 teaspoon coarse kosher salt
1/4 teaspoon freshly cracked black pepper
3-4 thyme sprigs
2 garlic cloves, partially crushed
2 tablespoons butter
Note: This technique creates a great mouth-watering charred steak using a very hot skillet while emitting a great deal of smoke. Be prepared with pot holders and proper ventilation.

I pan-fry all of my steaks! I like to sautee some mushrooms on the side while I'm waiting for the steak to rest. It's a great combo! Another of my favorite sides is to cut the florettes off of about 1/2 head of cauliflower or a couple of good sized bunches of broccoli, put them in an appropriate-sized covered bowl with about a 1/4 cup of water and steam them in the microwave for about 5 mins. They come out great without all the nutrients cooked out of them. Finish with some butter, salt and pepper and you're good to go...

i'm happy you talked about the heat level because so many videos just say "sear" lol. Took me a while to realize it shouldn't be on 8 high heat the whole time, might save some other people's steaks.

Did you have to cook it longer due to it being 2 steaks or does the cook times stay the same as if just 1 steak, and it will cook both? 🤔

Just made this tonight with s big baked potato. The Ribeye came out GREAT, except within two minutes of taking the pan out if the oven I forgot to use the oven mitt and “slightly “ burned three fingers. Fortunately I left go quickly. Other than that it was awesome. Thanks

Yes it does! Or you could just finish cooking in the pan if you wish. The key is to use a meat thermometer and pull it at the right temperature, no matter how you cook it.

6 to 7 minutes in the oven at 450 is too high IMO; I use 325 for 8 to 10 minutes with excellent results. Also, I see no point in pre-heating the pan in the oven when all you have to do is heat it up on the stove element until your oil starts to smoke. However, I like the idea of flipping the steak once after searing on one side and letting the other side sear in the oven. I also like the fact you didn't burn your butter to shit like most people do. Thanks for your presentation.

Thanks for watching. Specifically when using a cast iron pan we recommend placing it in the oven since you would already be preheating the oven. This helps the cast iron heat up slowly. Quick changes in temperature can be an issue. Using the stove is perfectly fine as long as you allow the cast iron to heat gradually. Thanks for your other comments as well.

@@CertifiedAngusBeefTestKitchen That makes sense. How long do you pre-heat the pan in the oven?
@CertifiedAngusBeefTestKitchen
@CertifiedAngusBeefTestKitchen 4 жыл бұрын
@@RebuttalRecords Great question! Go ahead and put the pan in before starting the preheat process. That way the pan will heat up along with the oven. This helps reduce the potential for a cast iron pan to crack.

This is the best! I like my meat more on the rare side so I took off a minute in the oven. Didn’t have any garlic so just used butter. The meat was so tender and juicy. Didn’t even need steak sauce. I’m having leftovers for lunch. Yum!
