Honey, that’s the classiest gingerbread house I’ve ever seen. The red candy with the white pretzels add so much. I’ve always wanted to make one but never seem to get around to it - too late now huh. Looking through my “sugar free” file today for an idea & found your No Bake Lemon Cheesecake recipe. If Chuck helps I want to make it tomorrow, sugar free of course♥️

Hi Steve, Your Gingerbread Cottage is just gorgeous.🌹 I have been making gingerbread houses for my family and special friends for decades now but along with the joy of creating them has also come alot of frustration. I got the idea from a book over 40 years ago and that was my only guide until now as you have revolutionized the process for me! A couple of things, if I may pick your brain, is that I have always stuck my gingerbread to a cardboard template with royal icing. I have never been happy about that but I tried without the cardboard support and by the next day or so the gingerbread had softened and the cottages collapsed. I did join the pieces with royal icing but not enough I don't think and I didn't use anything to support the cottage pieces as they dried either so not surprising that I returned to the cardboard template for support the following Christmas! I now feel so much more confident and excitedly looking forward to making them this year with my 7 yo grandaughter as my assistant. One more thing, the recipe I have used forever and one which the family have come to rely on is very similar to yours. However, my recipe uses golden syrup, not molasses. Would that have been a factor in the collapsing cottages? I would prefer to continue using the golden syrup if you think the royal icing, time to set, along with all the support bits and pieces will give it strength to stand upright until eaten. Oh, dear. I would hate to have a GGB house collapse. That must've been awful! I also wouldn't want to have the template on the finished house, either. How do you eat it? I know you were hoping to hear from Steve. I'm just another baker but I have made a study of gingerbread houses this winter and have made a few successfully-- no collapses. Actually, I am in the midst of making two for my friends for Easter (why limit them to Christmas, after all?) So I've made a few in just the last months. One thing I know is, it's important to make sure your gingerbread is sturdy enough-- so the recipe you start with is important. You say you use golden syrup which, from what I understand, is like corn syrup. That is likely to be your problem. Golden syrup is the polar opposite of molasses/treacle. Corn syrup is refined sugar before it's crystalized while molasses or treacle are the left-over from the plant (either sugar cane or beets) that, while still sweet, is darker, thicker and usually cheaper. That's why, in the old days, only the poor used molasses; because they couldn't afford refined sugar. It has that stigma. But it also has different properties. Molasses is much more robust and will give you a sturdier cookie. I, too, have used the same recipe for years, from a cookbook I got in the 1970's. I only used it to make gingerbread cookies until recently but it has stood up. I do use less granulated sugar than in Steve's recipe. Remember that sugar's natural state is liquid. That's why it dissolves so easily in just a little bit of liquid. But, too much sugar can make a cookie soggy and it won't stand up. If you try a new recipe, like Steve's, make cookies with it first to see how sturdy they are once they've set. Second, make sure they are thick enough. Steve's is 1/4" thick. I've tried both 1/4" and 1/8" and both seem to work well pretty well for me. But my recipe is different from Steve's. And, as Steve says, let them cool/set over night. It is important to make sure the GGB house is fully cooled and set before you start putting it together. And do use molasses or treacle instead of golden syrup. Anyway, I hope you find this before you make next Christmas' GGB house. Try making a Halloween house, for practice!

indeed as Marige says. Getting the cookie firm is important, golden syrup is an inverted sugar and can lead to softer cookies/biscuits. Also cooking a little longer, just a few minutes may help and let the gingerbread fully cool and dry. Some good tips here, sorry to have missed your comment.. Steve

I absolutely love your videos- great tutorials from which I learn so much!! I also like your wonderful colorful chiefs tunics. My question is- are molasses and treacle the same thing? And can you recommend a substitute - I am a diabetic and molasses is not an ingredient I can use. However, I love the taste of real gingerbread and would love it if you could suggest a replacement?

Indeed and thank you.. Most things I can think of are equally bad for Diabetics.. I wonder is Mesquite power or sugar would do? You would need to your own research but the flavours have a similar richness.

I love the house, it came out beautiful! I actually used your recipe but I had a bit of trouble like I always do when I make any sort of dough. When I mixed everything together the dough still wasnt stiff and it was really sticky. Do you have any tips on how to fix this??

You will have to mix in a little extra flour but not much, put it on the bench, sprinkle flour and "gently" mix until it feel right.
