I have always done my own broth because my mother did! I put in an onion, a couple carrots, celery and a couple of potatoes. Then I will puree the cooked up veggies that were in the broth and add them back in for flavor. The caution is use only a bit of the carrot unless you don't mind orange broth!! 😉 The potato acts as a thickener!

I also learned it from my mum! I like to substitute carrots with parsley roots. Similar flavour when cooked but much less sweet and not orange.

I started salvaging the turkey carcasses years ago when we ate Thanksgiving dinner at someone else’s house years ago. It is easy to make turkey stock. It never turns out exactly the same though because it varies with how the turkey was prepared, how much meat is still clinging to the bones, if I have onions, carrots, and celery to add as well as how much of each I add, etc. It’s still good either way.

This has nothing to do with your video, which I loved, but I wanted to thank you for these videos. I’ve been going through a massive wave of depression and anxiety lately. I’m at the best point in my life which makes it even harder. My hormones don’t help being 3.5 months pregnant. I've been meal planning. I'm actually going thru our freezers to see what we have (more like what has been buried) and coming up with meal ideas. like tonight I'm making meatball hoagies because I found 2 bags of my home made meatballs that I made a while ago. I also took out a pork shoulder/butt and have that defrosting to have tomorrow night as pulled pork sandwiches. I loved that pesto chicken tortellini bake recipe idea (plus my husband loves anything pesto). I actually feel like I'm on top of my meal planning game for once, instead of turning to take-out during the holiday season. Plus since I'm eating healthier its making a huge difference on how I feel. I'm totally calling this a win-win as we are eating out far less and cleaning out the freezers!! :) By the way if you love pesto as much as we do you need to try the Creamy Pesto Chicken and Bow Ties recipe from Campbells Soup---its to die for!! My husband is begging me to make this again.

I have some freezer meals ready to go already. I'm always meal planning, but right now my daughter is working a lot and her schedule is all over the place. Some days working till 11pm and other days she has to start work at 7am. So I'm making our meal plan around her schedule. The nights she's working it's just hubby and I, so those nights it's either leftovers or sometimes something I prefer but no one else likes. Like tomorrow I'm making tuna casserole, a small one with like 4 servings, cause no one else likes tuna.

On the chicken chili is there a way to get the written recipe. Mainly needing the size of green chilies cans. It looked so yummy and different. Thinking of making it today. 🥰

Looks like two small cans 7 oz or so, or you could probably use one larger can.

I always cook bones and veggie scraps at least 12-32 hours in the slow cooker for broth. If I manage to have extra I can it. It's wonderful especially to do things like cooking a batch of rice in broth instead of water. I also refrigerate it and skim off the fat before further cooking.

Yes, add a few splashes of apple cider vinegar and cook broth until bones break upon a little force. My last batch went 48 hours.

I'm not a big fan of Prego either but when I do use it,I just doctor it up with some extra garlic powder, onion powder, and whatever else I feel like adding..maybe you could try it ❤

I love to meal prep, but sometimes I can’t find a day to do it. If so, I just cook the recipes day by day and do double so one goes in the freezer. At least it gets done, and freezer gets filled. Btw, I always drain and rinse the beans cuz that’s where a lot of the “gas” is. If I need liquid I add water, broth, tomato juice or whatever.

when I make the broth , I simmer turkey bones in the water I boiled the potatoes in. When you boil veg a lot of the vitimans are lost in the water so... I use the water. A couple of onions with some of the onion skin to help add a golden colour to the broth and a bay leaf

I do my turkey soup the same, except I roast the onions and celery in a pan first to have more of a roast taste. 🙂

When making stock I add about 1/4 cup of apple cider vinegar and let simmer for as long as you want. The vinegar pulls the vitamins and minerals out of the bones.

Oh yeah, I was intimidated by making broth, I don't know why. But when I decided to get over my fear of canning I started with chicken broth. Killed 2 birds with 1 stone. I got the idea to make broth from Mary's Nest. She said to take your bones and vegetable scraps (onion skins, carrot peels whatever else) in the freezer until you have time/enough scrap) to make make a good batch. To make it even easier, I use my pasta strainer to put the ingredients in and that way I don't have to scoop it out.

I always save chicken backs, necks and wing tips as well as any rotisserie carcass in ziplock freezer bags and when I need to I make a big batch of chicken stock. It’s a great way to clean out veggies in the fridge. I also make my turkey stock and soup. I buy deli containers from Amazon and strain and freeze it.

Yes! My mom would always make Turkey Carcass Soup (which I have renamed Turkey Barley Soup, lol) the day after Thanksgiving. Turkey carcass with some onion, carrots, water and simple seasonings, cook down. So easy, especially if you do it in the Instant Pot, and SO delicious.

I always use the juice from the beans in Chili. It has so much flavor and helps to thicken the chili since it has some starch from the beans in it. It usually contains some salt so adjust your additional salt to taste.

Hi Kimmy. I learned from utube how to pressure can so now I can my turkey and chicken broth in qt jars and they will be good in the pantry for years. Then whenever I need it i just pop open a jar. This way I have more space for freezer meals in my freezer since i Just got a new freezer from Costco yesterday so Ive been making all your freezer meal recipes....soo convenient and delicious!!!! I love making broth! Another fun trick and money saving hack that make it even more simple is to save all the scraps from your carrots, celery and onions in a ziplock bag in your freezer (everything peels, leaves , ends and skins). When your cooking from scratch you’d be surprised how many times you use those 3 ingredients. I just keep adding them in until I need to make stock again, then when I’m ready to make another batch I throw those frozen veggie scraps into my pot with my bones and spices. It is so yummy and the peels give it a beautiful color.

I make my own broth from any poultry bones, duck, chicken, goose (very common to have in fall/ winter in Germany) or also from beef or pork bones. I also have a bag in the freezer of vegetable cut offs like onion skins, carrot peels and greens and add that to my broth. Making soups is so much easier and better with homemade broth.

To make shredding turkey easier i cut it into big chunks throw it in a bowl and then use my electric hand mixer

You should have used your garbage bowl contents in your chicken broth :) I never drain or rinse my beans when I cook them. If they're going into a dip or a salsa, that's the only time I will drain and rinse them. Right now, my pantry, 2 fridges and 2 freezers are crammed full so I'm trying to use up my stuff in order to restock. I may have to break out the pressure canner to cook some of the stuff in my freezer to make room lol Thank you for sharing your videos for inspiration!

I don’t boil the pasta even if not freezing it. I use bechemel sauce instead of the ricotta mozzarella blend and make a meat sauce instead of the red sauce on its own. Give a try-you’ll love it!

We are completely winging it. I get meat weekly at a local butcher...and plan based on what I get there. I do pick up a few extra items each week to put back in the freezer.

save the onion skins and ends, carrot and celery scraps and stick them in a freezer bag, when you get a gallon bag, cook them in water with some spices and make your own veggie stock. we'd bone broth too and also can the meat. makes meals SOOOOO easy. also find a recipe on KZbin for onion stock. it is ABSOLUTELY INCREDIBLE and soooo flavorful. its my new favorite base for soups. (or French onion soup)

Yes I make my own broth. Save your bones in the freezer from chickens, turkey or beef till you have what you need. Also save those onion scraps and skins, celery scraps and other veggies in the freezer for vegetable broth. I used 3 quarts in make ahead meals today.

The trinity is celery, onion and green peppers. You’re referring to mirepoix (meer-pwah) which is carrots celery onion!
