Great recipe and demo, thanks! Best to salt most legumes towards the end of cooking, particularly lentils. Salt added too early makes for hardened pulses & longer cooking times - can always add-in more seasoning later, but can never take it away. Also, frying off aromatics in ghee first; onions, garlic, ginger, helps with disintegration/emulsification of final dish & produces fuller flavor profile. Splatter guard is an absolute must when finessing a delicious pot of volcanic Daal..Yum!

One thing: cooking timings with water. I'm pretty sure that cook timings differ whether you live in a hard or soft water area. As a side point, flavours are more vivid if ingredients are cooked in soft water.

Alngwith a salad of choppedonion, tomato, green chilli, coriander, sea salt & mist importan vinegar all mixed up AND rice flour chappatis or brin(sour dough?) pav(bread). Yumm. Followed by mint, lemongrass, peppermint brewed tea

You could dice the onion rather than slice it. Smaller pieces = faster cooking.
