Apparently those sensitive to wheat can often handle einkorn, so could be worth looking into. I have celiac disease and I've been gluten free for 8 years. The closest I've been able to get to wheat bread taste and texture is with sourdough and a mixture of brown rice flour, tapioca starch, and whole psyllium husk. It isn't exact, but it's really delicious and satisfies that itch really well.

Yes! Psyllium husk provides that missing gluten-like structure to encapsulate the expanding bubbles of dough created by whatever rising agent you are using.

I have learned to make Chaffles to use as bread, and I have learned to add a tiny pinch of xanthium gum powder to give the texture to breads and gravy.

I make keto bread with almond flour, amylase enzyme and viral wheat gluten. Tastes like a nice sourdough and has 3 carbs per 25g slice.

I have a microwave cookbook quite similar to that from when we got our first microwave in the early 80's. The microwave came with a corningware dish with imbedded metal so you could brown things.😊

When my sister went to college in I think 1977 my Dad bought her an expensive Amana. Built like a tank, no turntable. It still worked perfectly thirty years later, though a wind-up turntable helped with the somewhat uneven cooking.

Shortly after my husband and i moved in together, our microwave died. My mother-in-law insisted we take an old microwave she had in storage. It was enormous, heavy, and faux wood paneled. And everything inside was metal! Turns out old school microwaves were kind of like ovens! I can't say that i ever got anything to brown in it, but it was a really interesting experience. It had directions and settings for all kinds of things that i never would have thought to cook in the microwave.

I make a GF cake that is similar to this bread. Eggs, almond flour, vanilla, honey, baking soda and salt. Smells divine when baking and I swear it has butter in it. Great served with strawberries and a cream cheese whip or vanilla yogurt

After more than a decade of living with POTS, with most doctors never even having heard of it nor understanding how debilitating it can be for most of that time (I am currently bedbound and I can't even sit up for more than a couple of minutes without either throwing up or fainting), suddenly people with "long Covid" are being diagnosed willy-nilly and while I have endless sympathy for anyone dealing with it, it's frustrating that THEY are now getting the more aggressive treatment and research aimed at them after the rest of us have been ignored for so long by the medical profession saying there's "nothing we can do for you". My ex also had celiac (though he wasn't diagnosed until his 20s, back in the late 90s and early 2000s, and even back then, it was impossible to get GF foods in the supermarket or whatnot. It cost so much and was just... so awful too. The options were super limited and the textures were foul. While I have legit food allergies (including peanut anaphylaxis), I can't even imagine having to grow up at a time when gluten-free options weren't common and nobody even thought to prepare GF foods.

I recommend La Brea Bakery's gluten free bread if you can find it. It is the closest thing I've found to the texture and taste of wheat bread.

Try adding a tablespoon of sweetener (I use erythritol, but I've heard there's a scare with it lately) and a tablespoon of cocoa or cacao powder. Also blend it better. Bread is a stretch, but it makes a decent cake in 90 seconds.

Not only did small appliances last a long time, but they could be repaired. When I left home at about 19 years of age, I paid $11 for a brand new toaster that I had for years and then paid about $5 to have repaired. I finally replaced it because I gave it to someone who needed one. Thanks for the video.

I'm not sure if you've tried it, but psyllium husk paired with a gluten-free flour makes some nice breads. And most of the recipes that have positive reviews use either rice flour or almond flour, so it's nothing too crazy for wheat free alternatives.

I have a cookbook that came with our first microwave back in the 1980s. It was an Amana. The book was called the Amana Touchmatic II Radarrange Microwave Cookbook. I have inherited it from my mom and still use it today. Most of my veggies are cooked/steamed in the microwave. We do poached eggs as well from a recipe from that cookbook. No explosions. The oat milk and honey bread from "Cannelle et Vanille Bakes Simple" is the best gluten free bread I've ever experienced: simple ingredients, feels like you're making real artisan bread, and tastes amazing. It also toasts really well!

There is a recipe called "Keto white bread chaffle" that may give you a better "Bread experience." I use it for a hamburger bun quite often. Not quite the same as a tasty "Real" bun, but acceptable when you just need a bun for a burger or sandwich. The recipe is for a mini waffle maker, but I think it might work in the microwave ... it's worth a shot.

I have a 1950s sunbeam automatic toaster and its still goin strong, makes lovely toast. servicable too. My Panasonic toaster oven is going 10 years now, also fantastic. my coffee maker is an early 90s BRAUN unit, and makes great coffee every day. They really don't make em like they used to.

I've made a variant of that that uses cashew or almond flour since they have a somewhat less distinct flavor than peanut butter, and it was a very tasty gluten free recipe

I've heard good things about King Arthur Flour's gluten free measure for measure flour. It's a mix of rice flour, potato starch, and tapioca starch, so no wheat. I've always had good experiences with King Arthur products and recipes, so it might be worth a try.

"Bob's Red Mill Gluten-free M-F-M" flour is also an excellent sub for regular flour. Excellent quality, and for those of us who can't possibly use a big bag of flour before it goes bad, the smaller bags of Red Mill are great.

I used to make this all the time!! You definitely need to toast it! After it is toasted it is like an English muffin. Add some peanut butter or cream cheese and yum!

The instant you pulled out the cookbook I was like WAIT I KNOW WHAT THAT IS! My mom had that cookbook when I was a kid. I'm pretty sure there were a couple things she made from it, but not the bread. I was always intrigued by the idea of making bread in the microwave but I never got around to trying it. Glad to see it tested out! Edit: I could swear there was bread in our edition of the cookbook, but it's possible I'm conflating two different cookbooks here. I definitely recall seeing a recipe for microwave bread in something my mom had though.

Concerning cooking stuff in a microwave: you can steam bao in the microwave in just a few minutes if you cook the filling thoroughly first and place a ramekin of water in the microwave with them. Without the added water, a few seconds too long changes a steamed bao to a deadly projectile 😅

basically steamed cake. I use a similar recipe to make a quick sponge cake dessert, usually some whipped cream and macerated strabs as topping, takes 5-10 minutes for a top notch dessert.

My father was an electrical/mechanical engineer who worked for the federal government for over 20 years and for civilian companies over 17 years. He always said that you could build a car, home appliance, power tools, etc. that would last a lifetime, but they are designed to only last for a predetermined number of uses. His best story was when he was contracted to design a windshield wiper switch. He did his best to design a switch that was high quality and wouldn't break. When he presented it to the company they loved it, but said it had a major flaw in that it wouldn't wear out and break. They told him to redesign it so it would only last for 3 to 5 years, they were in the business of selling cars and replacement parts. He cheapened the design, they loved it, paid him for his work, and that's why we can't buy high quality, nice things. He said the same thing about why we don't have 50+ mpg vehicles too! The oil companies are in the business of selling oil, gasoline, diesel, etc. and want a maximum profit. ...and that's the rest of the story. :)

My aunt introduced me to this recipe but she prefers to bake it in the oven. I've experimented and made something like a bicuit by replacing some of the almond flour with coconut flour, and a muffin/cake by using heavy cream instead of butter and some sweetener and spices or fruit. Ive also found that adding a little ground flax seed gives it a more grain=like flavour. It's my go-to recipe when I want some sort of baked good.

Im allergic to gluten/wheat. Only found out in the past fews years. I struggled really hard with the bread thing. The brand Schar has the best gluten free bread. They have baguettes and sourdough style bread.

I read an interesting article that said some people are actually allergic to fructans. They are almost always found in the same food as gluten. So it can look like the person allergic to gluten.

I think the recipe I used called for using only half of the egg.Also definitely no salt with salted butter.Its ok when you use it for french toast.

For your face, look up "perioral dermatitis" (also periorbital). It's really common for 30 something women but I didn't learn about it (from my dermatologist) until I suffered with it for months-- so now I spread the word. 😅 😊

I recently found a recipe for chia seed bread from "Two Sleevers". Haven't tried it yet but will as soon as I get the chia seeds. Can use white or black chia. Can grind the seeds or leave whole.The chia goo acts as the binder.

Hey Emmy-- I'm also having trouble with wheat flour and I suggest trying Ezekiel brand bread products. They use whole sprouted wheat along with several other grains and lentils and seeds in their bread and I find that it does not trigger my symptoms at all. It has a pleasant texture and toasts very well. It also is very nutritious and high in protein since there are so many different kinds of grains in it.

I'm right there with ya, Emmy. We have a Kenmore (Sears brand...and Sears is *poof*) microwave and toaster that's lasted us at least 12 years. The toaster is getting a bit weak (turn it up to 11 instead of 10 😁) but other than that. No, they don't make em like they used to. 😭😭 _Whyyyy?? WHHYYYY???_ Well, it is what it is. Itadakimasu!

I find I can’t eat US wheat products. Similarly I also get skin issues, as well as some upset stomach problems. I’ve visited Germany several times and have been delighted that I can eat their bread with no issues. I heard this is pretty common, as their wheat is much higher quality than ours here. That being said, I’ve been miserable for years without bread (gluten free bread is NOT the same) I recently found a brand that parbakes bread in Germany using all German ingredients, and ships to your door and you do the rest of the baking!!! It’s DELICIOUS, and tastes exactly how it did when I was there myself🤩 Anyways, it’s called the BrotBox. Thought I’d share, because a life without bread is significantly sadder. ❤️❤️ love you Emmy

Yep, this is the base "quick keto bread" most low carb people learn first. It certainly is not as good as regular bread and really does need to cool to dry out and lose the "eggy" flavor and not be so damp. It is a bit like a biscuit and is much better with added seasonings or used for a sandwich or topped with melted cheese, or as a base for berries like shortcake. Adding salt is usually unnecessary due to the salt in the baking powder. I found that a ratio of 1/3 coconut flour can also improve it. Nowadays, most stores offer a much better low carb or zero-carb bread product, or if you're looking to avoid wheat, manufactured gluten-free bread is probably a better choice.

I'm lucky to have my mom's old toaster that I don't even know how old it is. It automatically lowers AND raises the bread and is somehow perfect practically every time whether I'm using fresh or frozen bread. It's the toaster I've used for as long as I can remember and I'm going to be sad if it ever stops working.

I believe that my mother got a copy of that cookbook, when she bought a microwave, in 1976, maybe? We loved making nachos in the microwave, but now I have to try that bread recipe. I remember looking through that cookbook, but I don't remember whether I ever used any of its recipes. Still, it was a flash from the past. ❤️

My philosophy of appliance purchase is that, whatever I buy, it needs to do one thing very well. My fridge doesn’t need a monitor, my toaster doesn’t need a digital toast elevator, my washing machine doesn’t need to face forward (water doesn’t work like that anyway). Except for my iRobot vacuum, it has been my experience that the less snazzy the appliance, the longer it seems to last. My Oster toaster is manual press, wound timer settings, extra long and extra wide to accommodate 4 slices of bread, bagels, and waffles, etc…and has lasted for at least a decade and is going strong. I always opt for the appliance with the least digital features and the fewest buzzes and whistles and I never regret it. I generally do the same for automobiles as well, but there are more variables there. My college science professor used to say, K.I.S.S - keep it simple, stupid!

When I was doing keto/low carb.. I added shredded cheese to that sometimes.. and flavorings at times too like garlic n parmesan or chili powder and such sometimes adding a whole egg makes it eggy, try just the egg yolk.. I would do mine in a ramekin in the oven or one of the small silicone cake molds .. it's better done that way takes maybe 5 minutes... once the oven is hot and if you have a small toaster oven that's your answer try rye or potato bread to see how that works or maybe sprouted grain bread

I bake small bread loaves in my toaster oven or air fryer for 7-10 minutes then I microwave them for 30-60 more seconds & they poof more & cook completely- but have the caramelization from the toaster/fryer. I’m pretty sure panko is made by microwaving bread. I do a lot pf microwave cookery - the secret is water/steam. Anything poached pr steamed is great in the microwave.

I make this often. I microwave at 50% power for 180 seconds. This helps keep the top level. I use it for sandwiches or a burger. I used it tonight for strawberry shortcake.

I really appreciate you very honest review!! I swore never to eat meat again after I had a random 12 minute conversation with a total stranger. I had been on a 100% Carnivore Diet for 6 months BBQing a Ribeye steak every night... After only eating fruit, veg, beans, and grains for 5 months, last week I just started making different vegan-meat recipes, but so far everything that I've made, looks more or less like meat, but so far Nothing actually tastes like meat. I really don't understand all the reviews that people are giving. I only eat OMAD, so it's a bit overwhelming to mix together 10-15 ingredients and put all that time in that's required for these tried and true recipes, only to be disappointed, frustrating and hungry. Is it that vegans are more concerned about the appearance than the taste? At this point, I'm really not concerned so much about the look or the texture, but I'm desperate for a truly meat Flavor. Any Advice?

Emmy, you could instead of almond flour use nixtamalized (lime treated) corn flour.

That looks a little like a keto "mug" bread that I found a while back. But there were some differences to the one you did here. Toasting it was the key to make the recipe I was doing.

My mother received that exact cookbook with the purchase of the first microwave that 1. we ever had and 2. that I had ever seen or used back in 1978 when my parents finished construction of their first self-built home. Dad bought it along with our first VCR - he loved all the new "gadgets" and still does...

Now I'm remembering a microwave bread I made years ago when the docs mistakenly diagnosed my granddaughter with celiac disease (poor kid). It was made with Pamela's gluten free baking mix and was really quite nice. I cooked it in a mug and usually cut it into 3 slices. It can be a nice idea when you want a piece of bread NOW & don't want to wait for the whole yeast process. (Pamela's also has almond flour, and that gives it a nice flavor.)

This is a good base recipe, more of a blank slate, so to speak. I prepare a similar one, with instant oats, 1 egg, some liquid (here you can use tomato sauce or any savoury sauce if you want it savoury, or milk and cocoa powder if you want it chocolatey) and that's what I've been having for breakfast for the past year instead of wheat bread. If you tweak it to your liking is great, but again, just with oat flour is quite plain and bland.

If you want good bread, you can't rush it. Gluten needs time to develop to make that tasty, chewy crumb. If you can't have wheat, try millet, quinoa, oatmeal or buckwheat flour. You can also try potato bread made with potato flakes.

The problem is the gluten. It's a tiresome search for many with the same problem. What works for one does not have to mean that it works for another.

I recommend Schär brand gluten free bread. It is so good my family used Schär bread for stuffing at Thanksgiving and they wouldn't have known it was gluten free if we hadn't told them.

That cookbook looks just like the one that my mom had… it may still be in the cabinet at my parents house! We got our first microwave at the end of 1984, so that would be when we got the book!

The baking powder adds sodium. For such a small dish that was a lot of baking powder. Try using unsalted butter. As for the texture, it might be good as french toast.

If you're not totally wheat-Intolerant you can get "royal wheat gluten" that can give you a lot of gluten goodness without much wheat. The good thing about it is that it's very low carb, only about 4g per ¼c (30g).

I bet you could alleviate the "damp" feeling by mixing in more flour- maybe try some chickpea flour as well as the almond. that texture/mouth feel is likely from it being mostly egg and butter. I might also recommend mixing in some cheese... just because, you know, cheesey bread. :)

You can also make amazing carnivore waffles without any flour. 4 egg yolks, 2 table spoons of melted butter and 1 teaspoon of baking powder. Mix well, cook in mini waffle maker. Double for a larger waffle maker. You can add a splash of vanilla for sweet, or herbs and spices for savory.

I found a bread called brea. It's gluten free they have a white bread which is amazing, and a whole grain one that I can't tolerate. The whole grain has quinoa and pumpkin seeds in it. I just haven't had an easy time with baking gluten free.

My Mum took a microwave cookery class (yes I'm old🤣) and we had corned beef, apple pie, hot chips and cakes etc. Not everything was a winner and the books had hints such as soy sauce brushed onto chicken to look brown & cooked. Honestly I still make cupcakes in the microwave occasionally for nostalgia.

Oh, I've made this many times. This was huge with the low carb crowd about 5 years ago. I didn't eat gluten for about 10 years, so I would make this. Not great but it does help with cravings.

I'd recommend you mill your own organic wheat berries and make bread with that and see how your skin reacts. The grains used in the US are highly processed and most nutrition is filtered out

Hard to believe, but my daughter has my mom's Sunbeam toaster that was a wedding gift. That was 75 years ago. The only repair was a new plug over 50 years ago. Original toaster, but went through at least 15 irons. Me, just the opposite. Happy with toast and wrinkled clothes. ❤

I am diabetic and discovered this recipe a few years ago. I make it in round pyrex dish but just use egg whites and it doesn’t taste as eggy. Great to split in half and toast with butter in skillet for a nice Avocado bacon toast breakfast or egg bacon cheese sandwich.

I knew as soon as she pulled out almond flour that it would be a bit spongy. As someone who has to be gluten free due to allergies, try using like 1/4 of the almond flour. I'm not 100% sure if it'll be the same with the cooking time but rice flour, oat flour, cassava flour. They are all wonderful flours. And rice flour is definitely cheaper than almond flour.

Microwave is great for proofing bread 😁 - I heat a plastic* "glass" water for 2 minutes, then shove the bread in with the glass. Nice steamy atmosphere. *I've read glass filled with water can shatter.

Oh, I needed a distraction from this pain; I was also hoping to follow this recipe but then I remembered that the microwave I bought 8 years ago was donated 2 summers ago because I only used it when I got too lazy to heat up my milk for hot chocolate. I thought I'd never regret it. Now I'm back and forth between Emmy's video and Amazon Canada 😂

The difference between modern appliances and older appliances is people demand all singing all dancing stuff today. Does your parents toaster have the powered lower feature? The more stuff the appliance has the more likely it is to fail. Ive had my toaster for 6 years now and its still working fine, all that has is a rotary dial and a manual handle for lowering
