I had my first Sukiyaki a more than a quarter (edit)century ago; cooked by a Japanese friend -Miko san. Since then, it is easily one of my most favoured steamboat style..together with the grilled beef at the sides. I haven't cooked it the last few years and thought I'd try to remember how the broth is made. Thank you Dr.Tay Leslie. Ps: when sake was not available, i remember using 1:2 ratio of guinness stout and beer. *And raw egg dip was never my thing since then.

No need to wash the meat. The veggies you can wash. I don't usually take a bath before cooking but I do wash my hands.

Its quite forgiving. Just add about 3 - 4 Tbsp and then water and taste. Add more if you like.

There is already a lot of sugar in the recipe! Why do you still want to add more sugar?
