I have honestly seen a different side to you tonight when you talked about finance. You were smart and confident in what you were saying and it came.off well. Now I have no idea whether you were talking bollocks or not, but as a 41 year old that is the first time anyone has tried explaining that to me and i understood. I knew that inflation and stuff happened because, well, I'm older than most of you and habe worked in the property market for a lot of my life on the legal side. But what you said really makes sense. I'm at an age now where I'm.worrying about my legacy and what I will leave for my niblings when I die so it was really good to hear. Cake wise you did a.good job. Your crumb coat needs to be thinner, like really thin almost pulling crumbs off the cake. And there's a difference between frosting and icing. Many wedding cakes are iced rather than frosted because icing holds for longer periods. Well done though not a bad attempt (I also studied catering as a teen)

Jazz you did a great job for a beginner!! I’m so impressed and I’m a pastry chef! I think a lot of your icing issues would be helped by using different tools. Specifically off set spatulas. Luckily you had that flat spreading tool so you could clean up areas and sort of level it out. This also caused some parts not to be covered evenly. Also, since you weren’t stacking on top of your top layer you did not need a straw to support. If you had done what you did when you adhered the other cakes to the cake boards and just put a small dollop of frosting in the center and then placed your top layer there it would have held and you would not have had any issues. Feel free to ask any questions if you’re interested but like I said, you did an excellent job for a first time wedding cake maker!!

i always for icing, start off with the whisk attachment to make the butter pale and fluffy but then before adding the icing sugar, i switch to the paddle attachment for a smooth buttercream

For pure white frosting, use Crisco or vegetable shortening. And then butter flavoring so it tastes good!

I suggest Walton frosting recipe to help with sturdiness of frosting for piping. Also, there is clear vanilla that won't change the color of your icing.

If you can find a clear vanilla extract it won't tint anything. I know we can find it here in the States in some grocery stores, I'm not sure how common it is.

4:24 I think it's because a whisk goes too quickly and fluffs the mixture up with too much air, whereas if you want a slightly denser cake, the paddle folds everything into the mixture.

When doing the icing it's much easier to put it in a piping bag as u want the crumb coat very thin and then the rest icing thicker :)

BTW, love the whole white background, white nails, and white t-shirt, for making a white cake. I don't know it that was on purpose or coincidence, but it's kinda cool. Reminds me of this "all white" party an black African Irish freind of mine invited me too an African-Irish party before. I couldn't make it I think. But how he described it, was like a party where everyone where's all white. (This isn't a racist thing BTW. It's because everyone wearing white on white clothing looks cool. Like those all white suits. It's a style, and it's really cool.) I made some great African Irish friends back in my YMCA days. That was cool. You really get to experience a whole new variety of cultures, including the new culture of them here in Ireland. Those parties sounded really cool though. Those guys where awesome.

I will tell you a trick about your icing piping bag and put it in a cup and put the sides over the cup and put the icing in. Makes it easier

Great looking cake! I’m glad that when I was in school and I’m old in the mid 1980’s. They taught us about Finances and How to balance a checkbook. They never taught my kids that in school. I’ve taught them that and I take them to the Bank to different departments and ask questions. Then going back to being in school. I always wanted to be the short girl with little boobs and a cute body. I was tall with nice size boobs not huge and a average size body. I felt huge compared to my friends that were tiny and cute. I’m glad I’m tall now.

I 100% do that, I hate feeling that way and sometimes I even ring or message that person saying sorry if I said something or if I offended them. More so if I'm having a crappy day and that's the only thing in my mind & they catch me on that curtain day it worries me more. It's super annoying 🤦‍♂️😳 And with insecurities, I've had 3 c.sections and my belly isn't the same, I'm like a size 14 and fairly thick, I watch people who are so much thicker and prettier than me that it really annoys me that I cannot have their confidence or embrace what my body has done for me. So I wear a lot of black, baggy clothes, gym leggings & don't get me wrong I've some lovely clothes but if I do wear those clothes I still feel I need to cover my problem area because I still feel subconscious 🤦‍♂️🤦‍♂️😢

You're supposed to put frosting on the turntable as well. Also, just stick ine stick in the cake, remove it, line up the others next to the one you just measured, then mark the rest so you dont have to insert the remover each individual ine.
