Huge tip for keeping the warm. Set your oven to a very low setting just enough that it’s not going to bake some thing like 150 to 200 Fahrenheit. This will allow your deodorize in a warm dark environment. If you also put a smaller bowl of water in the tray underneath it will help make a humidity bath and it’s very similar to an industrial proofer. Or at least the ones that I used when I worked in the bakery

Most U.K. ovens will be Celsius . Proving temp is about 40c . I never think mine is warm enough. I heat the oven to 100c then turn it off and shove the dough in while it cools down. It stays warm enough then .

Kneading dough is not a science. As long as you stretch snd pound the mix.. you cant go wrong. 10 minutes is just a guide and depending of the humidity of the day and how well its kneeded.. you can adjust it. Bread making is scary but so rewarding. Keep on trying jazz. You'll get there.. also. No stress. Just let it be And you did a fantastic job. Also you can make bread so easily. Just buy flour, instant yeast and salt and a little sugar and follow a recipe

Tip: don't buy a pretzel box mix, just get some strong white flour and hovis yeast, cheaper and you can make about 3x as many 🥰 you did so good and I love soft pretzels, next time when you take them out the oven, dunk them in melted butter and roll them in sugar and cinnamon, they're insane with chocolate sauce 🤤🤤

@@debbiepoole2247 there is no reason you couldn't but to save yourself some money strong white bread flour and instant yeast will do the same thing ☺ and you can make more 🤭 soft pretzels are just like a white loaf, the only difference is the hot water and bicarb bath they have before going into the oven 😊 glad it helped 👍🏼🥰

@@jojogreen_mua I should imagine it would be like using gluten free flour 😊 you'd need to replace the gluten though and that can be done by using xanthan gum powder. Could get it online or supermarket maybe. You'd probably only need 1 or 2 tsp for the amount of flour you'd use to make them. They're amazing, I have a dairy allergy so use vegan butter instead and they taste soooo good ☺

Dang!! You did so well with those rolls!! In Canada, I made something similar to Nick’s version (with the cherries), but it was a Christmas Yule log, so larger scale and with whipping cream and chocolate curls that I slaved over to hand make with a potato peeler and solid baking chocolate. I was 15 and devastated when I realized I neeed to make home made whipping cream, not use the stuff in a can. As you can imagine, when I finished it looked beautiful, but when I brought it out for our guest…it went totally flat. I was gutted. My spiral was perfect, my cake didn’t crack- to this day, I have not made a second attempt and I’m 52 :D

Hi jazz, your pretzels look great. Pro baking tip, you can feel when it's kneeded enough because the dough feels smoother, in my experience anyway. I think baking is easier than people think its just a daunting idea. I would love to see you do these baking things from scratch instead of out of a box, you can bake more things with the base ingredients. Also, I saw a pack of 8 (4 smaller packs in a box) of kinder cards in lidl. Yes I bought and yes they are delicious

When kneeding bread you need to stretch the dough by pushing it forward on the cutting board, in order for the bread dough to stretch when you pull it☺️

Never rolled the swiss roll beforehand only after it’s cooled and stuffed. I just leave it ”open” on the towel and it cools down in about 15 mins. I do also cakes with swiss roll base because they are so fast to bake and cool and you can make many thin layers on your cake with them.

Get yourself a big soup pot from wilkos for around £10ish. They really handy. I use mine when reporting my plants 😅 I bought the blue bottle, but my son lost the little silicone bit on the too of the lid, so it's leaks if it falls over. Got a barrel type one with a screw lid and a long plastic cord strap(keep the lid attached to the bottle) to use as a handle.

Tip for when you roll the swiss roll (my home economics teacher from high school years gets the credit): Wet your tea towel and place the baking paper on top. Then dust the baking paper :-) The wet towel rolls better somehow, but won't get ruined :-)

Those cakes looked amazing. I make a tiramisu cake roll and it's delish. You should totally make one. YUMMMMO Nick might want to soak his cherries in kirsch next time instead of making a thick compote. Easier to spread and a slight boozy element. :) They truly looked sooooooooo yummy.

He's from Liverpool (scouse) and she is from the South, I think she mentioned Brighton once but I've never really known where she is from, just that's its South (London way) 😊
