Man i really love the way you do your thing an being passionate about it. I read your blog from top to bottom and really enjoyed it, so detailed, so well explained, with something very hard to find in cooking: a "why" on everything and how it works, almost like a scientific approach. The fractions of grams in sugar, salt, etc. seems unnecessary. I’m sure it following a formula, but why 1.1 kilo of flour and not just 1?

Yep, noted. This is a tested recipe used in a professional environment. The fractions should have been removed to make it easier for home bakers. 1.1 of flour is used for the perfect amount of dough to make the quantity of rolls, but yeah 1kg would be easier to work with. I’ll be updating soon, but the method will be the same. 🙂
