I just made these rolls today and they turned out great. I thought they would turn out like the ones I’ve made with sourdough starter I’ve made before those have been dry and not so good. Oh my goodness ! Mr. Kirkwood ! I have no words to thank you ! I am a uni student, with not much to spare, and me and my roommate ran out of bread yesterday. (She loves everything bread related, especially if it’s crispy), so I searched for crispy bun recipes on KZbin and your video comes up with a thumbnail that showed exactly what I had in mind. I don’t have a mixer and I’ve never even made bread before so it was quite a challenge for me. I happened to have all the ingredients so I thought I might aswell give it a try (WASNT very hopeful I dare say.) I followed your recipe carefully and after sore hands and sheer determination…. I made it !!! It tasted like real bread even the morning after ! My roommate was stunned !!! I gave two buns to the neighbor even, he was super surprised and asked when I would make bread again ! We thank you so much for this recipe, we loved the simplicity of it and of course, the result afterwards !!! It tasted like it was from a real bakery !!! I can’t put into words how good it was !! My family lived over a bakery in Kaiserslautern, Germany many years ago. My mom gave us 10 pfennig each morning to get a fresh baked roll like these ( Brötchen ) from the bakery to eat on our way to school. To this day I am a fiend for fresh baked crusty bread! LOVED watching this video!

I’m 56 years old. My mom, Edelgard, all through my childhood, into my ‘40s she would talk about how she missed brötchen for breakfast. For a long time I had no concept of what she was talking about. Then I visited Germany and realized that we have shit bread choices here in the U.S. Now you can get these same bread rolls ‘brötchen’ fresh baked at the local Lidl. She suffers no more as I make sure she has plenty of brötchen and butter. If I had your recipe, she wouldn’t have suffered as long as she did. Thanks for posting.

Made my fourth batch of these yesterday and I nailed it. They turned out perfectly. So grateful to John for this recipe. As I have never baked any breads from scratch before, I was a little intimidated in taking on these buns, but with John's detailed video and some additional advice that he was so kind to provide me in the comments section, I am no longer cowed by the thought of taking on such tasks. Indeed, I am actually confident that I will be successful in any baking project that I take on. Looking forward to my next, "Kirkwood Challenge." I discovered this about a week ago. Since, I've made 3 batches, gifting most away. They are absolutely amazing! Leftovers went into a zip bag to the fridge. Sliced and toasted were as good as fresh from the oven. My daughter and granddaughters picked up a bag to take home, still hot from the oven. Needless to say, the rolls didn't make it to their house. They consumed them before they arrived home. I asked when they wanted more, breakfsst was the reply. Thank you John, for such a wonderful recipe. A real favorite!

OMG!... Thank you, Thank you, Mr. Kirkwood! I have done this recipe 4 times. This is what I had experienced in case there's someone nooby like me : The first time I used "all-purpose flour" it was good, but it came even better the second time when I used "King Arthur Bread Flour". On my third time forgot to give 30 minutes for the second proof, and it came out tasting like yeast but eatable 🤣... note to re-watch Mr. Kirkwood's video 😅finally the fourth time following everything mentioned here, it came out tasting really good 😊it's my forever recipe to follow. The recipe was very good. Easy to follow and the video was very helpful. My dough was not as wet but I did follow the directions exactly and weighed my ingredients. I used King Arthur Bread flour and tested my yeast before using. The flavor was fantastic. I did the second proof as recommended. I also weighed the proofed dough and it was fairly accurate. Next time I will add more water and see if that changes the texture. Thanks for the recipe!

Another winner here! I made this to go with some Lasagna. But I made it hours before the Lasagna. Now for my secret weapon to bring it back to life and present it as hot and just fresh baked to serve with the evening Lasagna. I sliced it in half and put it in to our Breville toaster set on the bagel setting. This setting lightly toasted the face of the bread while just warming the back side. Thank you, John for another great recipe. This is now my new go to recipe and process when bread/rolls are called for.

You remind me of my Uncle Norbert who taught me to bake as a child. He was taught to bake with the US Navy in WW II and worked as a baker when he came home. These look so scrumptious! I know my husband and son will love them as much as I will! Even though I am losing my sight to macular degeneration, I feel that if I can measure properly I can still bake bread, as I have been pretty good at it in the past. It’s a good way to de-stress, and feel satisfied at the end of the day, and with good bread and fresh butter, things don’t seem quite so bad. You did us proud: an expected but welcomed guest for lunch and very little food in the house. I scraped together a veg and (a tiny bit of chorizo) soup with just enough time to make these rolls. They came out perfectly! They were hugely appreciated. Whew!

Hi John, I have just finished making these... although I changed your recipe a bit by swopping 500 g of bread flower for 300 g bread flour and 200 g spelt wholemeal flour. Apart from that all the same ingredients and proofing etc. And I must say, for the very first time attempt at making bread in my life (at 71 years), your instructions were spot on to help a novice get by. Naturally I had to taste one and it was great. The crumb was a tad tighter than I thought it might be, but nothing concerning. I put it down to the wholemeal spelt flour. The taste was excellent. So thanks very much for getting an old feller started down the path of a few home bakes.

This is the only breadcake recipe I use now.. Everyone agrees they are the best ever.. I made a batch earlier and now making another as they all were eaten within a couple of hours. They make great soup bowls too if rolled into a ball.

John, I had to laugh. I made another batch yesterday and when I was finished with the proofing I weighed out the dough on my digital scale and it was exactly 860 grams. Have to say, I was pretty proud of myself. Little story: my neighbor called me the other morning... I picked it up, said "hello," and the first thing she said to me was... "do you have any of those buns? I'm jonesing for one." I had one left and took it over to her. You'd think I'd just given her water in a desert. She loves them. Gave her two more last night right out of the oven. Anyway, and as always, thanks for your coaching and encouragement, John, Truly appreciate it, sir. My best to you and your family. Respect. Thanks so much, great video! I made these tonight and there are delicious! This was my first time attempting bread of any kind. I followed all instructions but I didn't have a water mister, instead I lightly sprayed mine with sunflower oil (that's all I had) but they were still amazing. With my oven I did have to cook mine for about 10 minutes longer. Can't wait to try another one of your recipes.

Indeed they look wonderful. I will have mine with lots of butter, and 4 or 5 of the thinnest Mortadella slices (the kind that has pistachio nuts in it) you can cut. Fit for a king.

I just tried this for the first time last night, and while not as crispy or pretty as yours (a few more minutes in the oven would have done the trick), they came out way better than I expected. I'm usually not much of a baker, but I gave these a try today and the result was quite good for a first attempt. Turns out it's harder than you think to split a dough evenly into 4 parts, so some rolls were a little bigger than others and not having a razorblade also makes more of difference than I thought. Even though my kitchen knives are really keen, the top ended up looking quite different, but not in a bad way. I'm sure to give your other recipes a try as well and from now on I'll always have to clarify which Chef John I got my recipes from when I cook for people :D (half of what I cook is from foodwishes' chef john)

Made these crusty rolls and they were so tasty. Took three tries and finally got them almost perfect. Your ciabatta and sandwich recipes are other winners I have finally perfected. So yummy. You're such a fabulous Baker. Calm and easy to understand. No showmanship like that phoney baker on the GBBO. Still working on your baguette recipe. Not quite there yet. Keep the real baking coming.

Neither did mine, baked mine for 21 min total, followed the recipe exactly with steam and all, I think the temp should be a lot higher for these types of rolls, thinking 425-450f should do the trick, just like with baguette 🥖

@@lusineroy yes, i do rolls at 250C, which is 450F i think. I put the pan with water straight on the base of the stove during preheat,not on lowest rack. Makes a lot more steam. Then i also spray the rolls with water twice in the first 10 minutes. Lower temp will likely give a lighter crust.

If your stove isn't new, try putting a thermometer inside. Then turn it to different temp settings, all the while moving the thermometer to different positions: front middle, front right, front left, back middle, etc. My oven has 2 hot spots, and 1 spot where it's blind. They're quite cheap and can be found in the kitchen appliances section of your hardware store.

These were easy to make and tasted great. Ive only ever made pizza dough which had a higher hydration. So working with this dough was a breeze. Making again for the second time today. Doubling the batch as we ate the 8 buns same day. Used as hamburger buns too.

Ive made these and made slight adjustments (add a tablespoon of honey to the dough) And they're absolutely perfect every time. Everyone who tries them tells me theyre the best rolls they've had.
