The explanation is smooth and I like how the kitchen is decorated. I'm seldom fond of this cool color tone but here it's simple, fresh and tools are like efficiently arranged. The beige colors give the calm and concentrated feelings. If there could be more details given, it would be more attractive.

Well if that is your founder's recipe he clearly didn't know how to make madeleines. The butter must be melted and should still be warm when being incorporated. The batter should also be rested before use.

that was the first thing I noticed...WHERS THE BUTTER?! lol that's what makes Madeleines so good is the buttloads of butter. this recipe just sounds like sugared dough

I am disappointed too, I was so excited to make these so I called my local WS store and was told they are too busy to help me! I was looking for orange blossom water to order online at there website as well as the mold pan; I guess I will go elsewhere.

the ending is so fast after watching the entire video , the recipies was not in full view only the the women and tea pot what is the point having a video if the ending is about something else. the recipies should not be so fast at the end and it should be in full view of the result. Bad Video

On their blog, But here you go Chuck Williams’ Madeleines Ingredients 1/2 cup (2 oz./60 g) cake flour 1/2 tsp. baking powder 1 egg 1/4 cup (2 oz./60 g) granulated sugar 2 tsp. orange flower water 4 Tbs. (1/2 stick) (2 oz./60 g) unsalted butter, at room temperature, plus more for greasing Confectioners’ sugar for dusting Directions Position a rack in the lower third of the oven and preheat to 400°F (200°C). Generously butter a 12-mold madeleine pan. In a bowl, sift together the flour and baking powder. In another bowl, using an electric mixer on medium speed, beat together the egg, granulated sugar and orange flower water for 30 seconds. Increase the speed to high and beat until the mixture has quadrupled in bulk and is very thick, about 10 minutes. Using a rubber spatula, carefully fold the flour mixture and then the softened butter into the egg mixture. Spoon the batter into the prepared molds, filling each one about three-fourths full. Bake until the madeleines are lightly browned around the edges and on the bottom, 10 to 12 minutes. Remove the madeleines from the oven and immediately turn them out onto a wire rack. Using a fine-mesh sieve or a sifter, dust them with confectioners’ sugar. Serve warm. Makes 12 madeleines. Note: Madeleine pans typically have 8 or 12 shallow molds and come in tinned steel, metal with a nonstick finish, or pliable silicone. If you use a black nonstick madeleine pan, reduce the oven temperature to 375°F (190°C) or shorten the baking time by a few minutes. Its as simple as mixing crepe batter. No mixing machine needed. No need to whip eggs for 10 minutes, the baking powder does the aeration. No sifting needed. In a bowl , using only a hand whip. Mix the eggs and sugar briefly , the sugar dissolves in 30 seconds. add all dry ingredients and stir with the whip for 30 seconds just to blend out lumps. stir in the warm melted butter and lemon juice. Scoop or spoon into buttered/floured molds and bake. Whilst she is whipping her eggs for 10 minutes, mine are coming out of the oven. I'm a retired pastry chef. and thats how its done in Paris.
