Back in the day, my mom made the BEST Apple Pie, the same her mother made during the first depression. The crust was tender, light and flaky and the apples weren't crunchy like store bought. She used Crisco. I may have to try yours to compare.

I LOVE that you used your hands....People don't realize how many things you can bake with just the power of your hands. I appreciate a good stand mixer, but when I'm showing people how to bake, I always start with recipes that use no machine at all. They are easily the best recipes I have.

Yes! for some reason we forget that there were recipes, before there was electricity! Elbow grease, that is what it was called! :)

Thank you so much Gemma! I tried this recipe for my pies for Thanksgiving and they were the prefect compliment! I made Pecan, Pumpkin and Dutch Apple! Buttery and flaky, I can see why the confectioner sugar is a must! Have a great Holiday!

Love being able to freeze pie crust. I pre-make pie crusts for Christmas few weeks in a head; makes it so much easier for the holidays.

I baked an apple pie for the first time in my life yesterday for a christmas dinner potluck. I used this recipe to make my double crust pie and it was amazing! The crust didn't crack and tasted so good. Thanks for the wonderful recipe gemma!

Thank you so much for this wonderful recipe! Super clear instructions and great tips :) I used the pie shell to make a cannoli pie and with the dough from the trimmed edges I made a small nutella pie (just put a big dollop Nutella in between two layers). They turned out great!

I like to grate my frozen butter into my dough... I even leave my measured flour in the fridge in the bowl I'm mixing it it!

this looks good. when I've made pastry, I've wetted my hands in cold water (after washing them first) and I find that keeps the pastry cool too! icing sugar is a great idea for a sweet pastry!

Ah! Quiche is the obvious one, roast veg is fabulous, use goats cheese with roast veg, tomatos etc, potato and leek with ham, limited only by your imagination! :)

I bake eight pies for Thanksgiving every year; four pumpkin and four apple for family and neighbors. I usually just use a store bought crust. I'm going with your recipe this year. You're a real Gem, Gemma.

Hi Gemma, I have tried making your crust before, but have always had problems with it ripping when I roll it out, which results in scraggly edges and an uneven shape. Any tips for preventing the dough from ripping or how to fix tears in the dough while rolling it out? Thanks.

Looks wonderful Gemma. I will try this one. My Wife makes her own pumpkin pie but not crust. my 1 question is should I Pre-bake the crust or not ? I have heard to pre bake if it is a 1 crust pie but we have no directions for her homemade pie.

You mentioned that we can freeze it for later use. is there any tip for thawing the dough before rolling out? I'm worried that it may turn out too hard or dry.

Hi Jennifer. You can freeze this for up to 8 weeks. Roll out your pie crust and place it in the tin. When ready to use take out of the freezer and bake directly from frozen. If you are using it for a pie that normally needs to be baked blind just bake it as is, with no beads or beans. Just bake the crust from frozen, eliminating the task of blind baking ever again.
