▶Ingredients (About 10 pieces for each flavor)
[Dough] - This is the amount to make 3 flavors all at once.
210 g butter
99g powdered sugar
36g egg white
2 g salt
[ Vanilla Dough]
73g cake flour
10g corn starch
1/2 vanilla bean
[chocolate dough]
63gcake flour
10g corn starch
8g cocoa powder
2g vanilla extract
[Matcha Dough]
65g cake flour
10g corn starch
6g matcha powder
2g vanilla extract
1) Beat the soft butter at room temperature slightly.
(I used a hand mixer because the amount of the butter is a lot, but if the amount is smaller, it is better to use a whisker and your hand.)
2) Add salt and powdered sugar and mix lightly just until well mixed. Do not overmix.
3) Divide the whites at room temperature, which are not cold, into 3 portions and gradually mix in.
4) Divide the butter dough into 3 bowls of about 115g each (the dough weighs about 345g in total)
5) Sift powdered ingredients together and mix with a spatula.
6) Put it in a piping bag and pipe it into the shape you want. (piping tip : 853K)
7) Bake for 25 minutes at 170 degrees Celcius above/160 degrees Celcius below. (Wizwell Enhance oven)
*Unox/Gierra/Smeg, etc. Convection oven: at 160 degrees Celcius for 25 minutes
*Storage: It can be stored in a cool room for about 5 days sealed, and if you want to keep it longer, freeze it. (Can be stored for more than 1 month in freezer)
