Bloody Mary Deviled Eggs - 12 Large Eggs - hard boiled - 1/4 c. mayonnaise - 1 tbsp. tomato paste - 1 tbsp. horseradish - Juice of 1/2 a lemon - 2 tsp. hot sauce - 1 tsp. celery seed - Kosher salt - Freshly ground black pepper - 1 tbsp. old bay seasoning - 1 tbsp sweet or smoked paprika - Olives, for garnish - sliced - Celery leaves, for garnish Steps 1. Cut hard-boiled & cooled eggs in half. Remove yolks out and place in a medium bowl. 2. In a small bowl make sauce - add mayonnaise, tomato paste, horseradish, lemon juice, hot sauce, and celery seed. Blend until smooth (sauce will be pink) salt and pepper to taste. 3. Transfer to a piping bag - or Kevin’s idea of a ziplock bag. 4. Place old bay seasoning and paprika on a small plate and press cut side of eggs into dry seasoning mix. 5. Place eggs on a plate and fill the seasoned eggs. 6. Garnish with any combination below: - Celery leaves - Thinly sliced Garlic olives - Thinly sliced Black olives - Thinly sliced Pickles - Thinly sliced Pickled Garlic

You can use a spoon to get under the shell. That can help. But also for some reason, using an instant pot-they peel super easily.

I use my instant-pot and ran water over the egg while peeling them too. Just makes more sense that way. Sometimes if you don’t use the running water, a piece of the shell can break off and get in the way of your fingers. I’ve had that happen many times and that be the cause of an otherwise perfectly peeled egg getting punctured and ripped by a piece of its own shell. Super disappointing when that happens!

One other comment, on 'how to boil eggs that peel easily'. Kenji has a great video on this. He says he experimented extensively on this, to make his restaurant kitchen run more efficiently. TL/DW: Boil enough water in a saucepan to come up about half way on the egg(s) you're boiling. Put the egg(s) into the boiling water, cover and let boil lightly for 'x' minutes (his video includes a visual scale what the yolks will look like when boiled for different times - 7 minutes leaves the yolks partially soft on the inside). Roll them lightly on the countertop to fracture the shells, and peel. I've been using this method for about six months, and have never had trouble peeling the eggs. I don't like Bloody Marys but they do look good. I like horseradish but I'd probably cut back on it. I'd also replace the green olives for black. You can tweak it to your liking. 🥚🍅🫒
