I make them, but slightly different. Same meat only, but I add dehydrated microgreens for added nutrition. I roll them thin, but long like sausage before baking. When added to a wide mouth jar, 6 fit in each. They fill the jar and they fit great on a sandwich as meatball subs, add sauce, mushrooms and cheese, OMG.

Just wanted to share: the HAMBURGER locally is $5.99 on sale! 80/20! However, chuck roasts are on sale for $3.99. I have a meat grinder attachment for my kitchenaid. For two dollar a pound savings I can put in a little effort. Plus, chuck is what is cut up for stew meat anyway so I can can up some hamburger, some meatballs, some beef and save a lot. Quick note; make friends with the staff cuz they can tell you when the meat is marked down nearing the sell by date. Save even more because you either immediately freeze or process !

Yep! I do the same. Not only is it usually cheaper. In some ways it's even better to buy the chuck roasts, since you can while cutting up the roasts, choose how much fat you want in your ground beef, stew meat or whatever you make out of it. ☺ I have both a meat grinder for my kitchenaid, and also 2 #10 large cast iron hand cranked meat grinders, which I haven't used for quite a few years. I started out using those when my children were babies, since there was no way I could afford buying an electric meat grinder. I've hauled those old heavy grinders with me wherever we've moved, along with other non electrical and heavy "tools". Never know when I'll need them again. Better to have them than regret not keeping them when/if I need them...

When the pink slime was exposed several years ago I bought a meat grinder and grind my own beef, pork and poultry!

Every time I have been in the grocery store buying whole beef brisket for 2.99 a lb someone in line has commented on I must be hosting a big barbecue. I always share with them that I am taking this home to grind into hamburger. I am saving a fortune. Thanks to Leisa even when my freezer is full I know how to still take advantage of this price.

Canning hamburgers are really great too. If you use a jar ring to form them they come out just about the right size to jar. Do the thumb in the middle thing because they puff when you cook them.

@@richardpohwat7018 When I did it several years back I added onion soup mix to the beef like I do when making them fresh and instead of water I used beef broth for the liquid. They turned out great. I'd be curious to know Lisa's take on the onion soup mix since it's technically not just a spice but has minute amounts of other things in it as well such as a relatively small amount of corn starch. I figured that since it was all cooked into the burger prior to canning that it would be ok. Can't say how they would do long long term because they were too good and I ate them all within about 3 months. LOL

I like canning fluid things like stocks and soups in regular mouth and chunky things like meatballs or potatoes in wide mouth

Want thank you for giving me confidence to try canning… I just ordered another canner. I ordered an all American. I’ve had a couple- never use them and then sold them… I plan to can hamburger meatballs, and corn. Those are the things. My husband really likes and I’m fortunate that I live in a community where they can teach me how to prepare my canner

I tried this but made mine a lot smaller and used a home made tomato sauce. Tried it as a pizza topping or meatball subs which is my husband's favorite. Yeah life is great when there's something already put together. Thanks Leisa love your videos

I made these a few months ago. Great idea. I used some mushroom and onion powder. Next time I want to try tomato juice instead of water since everyone here likes spaghetti and meatballs. Thank you so much!

I hand roll my meatballs fairly small and can usually fit 11 in a pint and I use broth, any kind of broth, if I don't have broth I use water and onion soup mix. They turn out amazing!! I have also done them in my homemade bbq sauce or marinara, also AMAZING. Such a great convenience food.

I never thought of adding powders to the meatballs (and sauce). I usually add chopped onions, peppers and mushrooms. This way, I can still safely get the flavors. Thank you!

Every time I find ground turkey or chicken, I mix up ground pork or hamburger with it for meatballs. I mix in whatever spices. I bake them about 20 minutes, can them about 10 to a pint. I fill the jars with tomato juice or spagetti sauce over the meatballs.... pc for 75 minutes. I do some quarts ...but pints make enough for a meal. Mini cupcake pans are the perfect size for holding my meatballs in the oven.

The only reason I will only use wide mouth jars for any kind of meat is the cleaning factor. Those darn proteins that like to stick to the inside of the jars are so hard to clean if you’re old and arthritic like me. Otherwise any jar will do!

I saw a post on one of her other vids that the person uses an unused so clean toilet brush to scrub her jars; much more durable and scrubbing power than a bottle brush.

I have started using (new unused) round toilet brush for cleaning my jars. It is the perfect shape and size and the bristles are hard and clean very well

I done some research and found that in place of some type of grain to hold the meatballs together you can use boiled potatoes - 1 large potato per 2 lbs of meat. After the potatoes are boiled, mash it up - without butter or milk - and use it to mix with the meat. The starch in the potatoes will help bind the meat together. if you want the potatoes to be a bit creamer you can use a little bit of broth to get them to spread out more. Also using fresh onions or peppers will effect the binding - use dehydrated ones and the balls will not fall apart. - FYI If I am wrong, Master Canners please let me know if this is not safe.

I have canned so many quarts of meatballs which you inspired the last time. I used a quart last night with a quart of hot Italian sausage with pasta sauce and spaghetti. It was fantastic. I have a unique way to cook the meatballs that makes it quick, easy and hardly any grease. I toss the meatballs in boiling water. It only takes about a minute until they are firm. In my opinion it comes out much better than cooking in the oven. The texture is way better.

I canned meatballs ( who knew?) after watching your previous video. And, yes, I canned some in pasta sauce and some in broth. So I can have either spaghetti 🍝 or meatballs over noodles 🍜 (I make a gravy using the broth and throw in some mushrooms 🍄, also canned, and onions 🌰. ) So good. Thanks for sharing.

I flattened my meatballs cooked them in the skillet and fit six of them in a 12 oz jar. I have also made small meatballs and used short 8oz jars. 🙃

Leisa have you canned hamburger patties? I made some out of lean ground beef, thicker and taller instead of thin and wide, I just tried putting them in wide mouth jars and they fit perfectly. I have canned loose ground beef, all kinds of chicken pieces and pork and even sausage patties and all turned out wonderfully. The canned hamburger patties just sound like a great addition to our pantry for my family and I. And by the way I am going to can meatballs like this, maybe by tomorrow since we got a load of hamburger meat from a wonderful local cattle farmer who decided to start a store from his butchered cattle!!

How funny we just had meatballs I had previously made for dinner tonight! I watched your previous video at least a dozen times! I made them for us first, then canned half pints for easy protein for my grandma who eats soft foods only. I think adding powdered dehydrated mushrooms was still the best canning recipe tip I’ve ever heard. What a huge flavor boost 🤤. I also blend up onion and garlic in there. So good!

Hi Leisa, how wonderful to have seen you so many times this week. The best meatballs I ever made were beef and pork in Swedish meatballs. It called for cardamom but I live in the boonies and can't find it anywhere. Ginger is the best alternative.

Just in case you are interested, my allergist said there are now treatments for that if it’s an acquired allergy from the lone star tick. I have lots of allergies so I know they can be a pain to work around all the time so I hope yours is treatable if you want it to be.

@@nancywest1926 I sure don’t know if it’s treatable if it was that long ago but my allergist said if the person stays away from red meat it has a better chance of being curable. It was just a side conversation so I don’t really know too much about it.

Leisa, not sure your way of eating, but anyone KETO I eat spaghetti sauce and use raw cole slaw cabbage for my "noodles". Cheap, and satisfy my cravings for noodles (lol) hope this helps someone. Will definatly can and make your meatballs, sauce over cabbage! Thank you!

I'm surprised that the density issue with canning certain meats isn't an issue with the meatballs. Since I know I can safely can onions, garlic, peppers etc, I would add those to my meat mixture as well as seasonings. I make my own marinara sauce and I'm going to do these using my sauce. I am looking forward to this! Thanks for sharing

My husband seen the jars and said no way for the hamburger ,I made sloppy joes this week he said they were good .Then I told him that’s the hamburger you wouldn’t eat that I caned .Thank you now I’m going to make meatballs .

I can chicken meatballs; I use a spicy chicken meatball recipe that I found online and wow are those meatballs good! I prefer them to the beef since the beef seems to have a weird texture/flavor after canning.

I hav a 1T, 2T,&3T Cookie Scoop Set. I am going to use the 1T scoop to do this. More/smaller meatballs, but less liquid. I may use 750ml/1-1/2pt as well as 500ml/1pt wide mouth canning jars. I will add 1/4t BTB per pt. BTW, I missed how long you processed them. Nice video - as always!

If you eat Ramen, use that stock for it. Or mashed potato flakes. Or rice, or noodles. 😊 Got a friend, he gets ugly chicken with a LOT of stock, and the pint makes 1 meal, quart for 2.

I like to cook my meatballs, from raw, in a spaghetti sauce so they come out moist and tender, rather than pan fry or brown them in the oven. Is that an OK way to prepare them before putting the meatballs into the jars for canning? Thanks for everything you do and share with us! 👍🏻👍🏻
