Your dumplings look like potstickers. You can buy an empanada press on Amazon for a few dollars and it will form them perfectly. Even so, I bet they tasted great.

You moved them around too much. You put them in the pot of water to cook. You put them in the boiling water and not too many at a time. That wat they don’t fall to the bottom and stick. Or even better, place the dumpling in a pan with some oil and add a small amount of water. Let them cook until the water is gone and then they will fry in the oil until they are brown. Then serve with soy sauce, sweet chili sauce, my favorite, or plum sauce. 😊
