Hi Gwen! In most cases, the technical term for an armhole in sewing is the "armscye" (prounounced "arms-eye") and the part of the sleeve that seams into the armscye is called the sleeve head. But in practice, we just call the whole mess "the sleevils" and silently cower before them.
