Yes the cloth we had it on was damp which is normally fine but I think being cold and dry meant it dries out a bit faster...

Hi there, make sure that the "seams" are stuck with the flour glue I showed in the video. If the pastry bursts at places other than the seams it could be a number of other reasons. First make sure that the filling is completely cooled before beginning to fill. The also check your oil temperature and maybe try a lower or higher temperature with smaller batches to test if that helps
