Ingredients
800g chicken (native chicken preferred)
1 tbsp annatto powder (or annatto seeds)
1 onion, sliced
1/2 bulb garlic, chopped
1 thumb ginger, sliced
chilies
4 tbsp soy sauce
3 tbsp vinegar
1 tbsp sugar
1/4 tsp salt
1/2 cup water
3 bay leaves
1/2 tbsp peppercorns
1. In 5 tbsp of oil, dissolve 1 tbsp of annatto powder.
2. Sauté the garlic and onions, then add the ginger then continue to sauté for another 2 minutes.
3. Add the chicken then stir until well-coated.
4. Add soy sauce then stir to mix for another minute. Add bay leaves, lightly-grounded peppercorns, chilies, sugar, pinch of salt, vinegar, and water. Bring to a boil then simmer for 20 minutes, or until chicken is fully cooked.
5. Once chicken is cooked, return to high heat and continue to stir regularly until sauce reduces to a thick consistency.
