* Making Flavorful Salt & Pepper Pork Chops *
800g pork chops
* Marinade *
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp xiao xing cooking wine
1 tbsp sugar
1/2 tsp baking soda
1 tsp salt (or 5-spice salt)
1 tbsp cornflour
1/2 beaten egg
1 cup cornflour
* Garnish *
spring onions (green part sliced; white part diced)
red bell pepper (diced)
garlic (minced)
1 tsp 5-spice salt
1. Cut the pork thinly to about 1/4 inch thick. Tenderize by repeatedly hitting it with the spine of the knife.
2. In a bowl, mix in all the marinade ingredients and mix the pork for about 1 minute, until all the marinade has been absorbed. Set aside at least 10 minutes.
3. Mix in half of a beaten egg, then about a cup of cornflour (add gradually) mixed well until fully coated. This may take a while to mix.
4. In a heated pan with oil over medium heat, fry the pork pieces for less than two minutes, turning over at least once. Since the pork is thin it will cook quickly. Double-fry to make it extra crispy.
5. In a clean wok, add a bit of oil and butter over low heat, then saute the garlic, then the onions, until fragrant. Add the red bell peppers then mix well.
6. Add the pork chops and spring onions then mix and toss.
7. Sprinkle about a tsp of 5-spice salt then toss the pork a few times to evenly coat. Sprinkling with your hands will spread the salt more evenly than just tossing from a bowl.
5-spice salt is a mixture of 1 tbsp salt toasted in a dry pan for about 2 minutes over low heat, with 1 tsp ground pepper and 1 tsp 5-spice powder mixed in well.
