One of my dearest friends Natasha lived in Spain for 25 years. She taught me to add parsley and Clamato to my gazpacho. She also liked to add fresh sweet corn to the top. Sometimes she would add a swirl of crema or heavy cream. It was always delicious!

Ive soooo enjoyed watching you cook these foods! Such a fun series. I dont eat many carbs for weight loss and blood sugar control but many of these dished Im sue Ill be able to work in! Im down 14 lbs my friend!

This is one of the few I recreated. It was so tasty. It was a great cold soup/beverage. I left mine with a few lumps. Not really chunks more like lumps and ate it with a spoon and some garlic cheese bread. I'm from the south (Georgia) and some days are so very hot. It was so refreshing. I had it for lunch a few times. It was very good i will continue to make it in the future. Plenty of nutrition & with the cheese tast very filling & cost effective. Veggies are cheap and even more so if u have a garden.

I was just talking to my husband like a week ago about gazpacho. I asked if he had ever heard of it and he said no. I told him it was cold soup and he said nope! Lol I was kind of with him, but you made it look good. Good job on the video. Really liking this series.

Hi, I just bumped into your videos and loved to see that you were going to prepare gazpacho!❤ because it is not that common and when people in the US think about food from Spain, they just think it is similar to Mexican food, mostly hot and spicy, but they are actually very different types of cuisines. In general, Spanish food is tasty but very mild and simple, more similar to other Mediterranean countries like Italy, Greece, France, Portugal…so I was quite curious to see how you would be doing it…almost prepared for a shock, haha 😅 I am from Spain, actually south of Spain and have been making gazpacho my whole life. I must say that you did a pretty good job, actually but I would make following adjustments to make it more like the original traditional dish, which as you mentioned is not really a soup as it is cold, but a cream (some people make it quite thin, liquid and drink it without a spoon but my family has always made it thick, adding bread and eat it with spoon). There should be more tomatoes, I would double the amount of tomatoes for the amount of rest of ingredients you had, and yes, they should be very very ripe, almost to the point when many would throw them away. And definitely no black pepper nor cumin, that for sure. Of course, everybody is free to cook as they want and try variations but for traditional gazpacho, definitely none of these two spices😊 try it like this and have it very very cold, that’s also an important tip! It is so refreshing when it is really warm and you come from the beach ❤ But yes, you did altogether a very nice job and I look forward to check your other videos of other cuisines! Btw, I came across your video of the challenge 30 days of 30 mins walking…i think you are lovely, very natural and funny and then I got motivation to walk more, thanks!😊

I've had melon soup. That was interesting.They blended the different melons then put them in the bowl in different spots so it was very colorful. I think they put a thin slice of kiwi and a sprig of mint in the middle. I MIGHT like this with red pepper and pickled red onion. Unlikely to try because.. I feel I would just like to have a salad instead.

As a Spaniard, it´s an OK attempt to gazpacho, but that´s not really it. Gazpacho is more of a cold drink, than it is a cold soup (Maybe you´re confusing with salmorejo, a similar recipe, which is thicker). In Spain, you can actually buy gazpacho in bottles to drink from, no spoon expected. To help you with that, just add a higher percentage of juicy tomatoes, or even a tad of water. The texture should be less coarse too, so it goes easier down the throat as a nutritious refreshment for hot Spanish days, when you want all of the nutrients, but you just don´t feel like "eating". If you insist on taking it as soup, I suggest you cut actual bread in small cubes, fry them lightly in olive oil and garlic, and once they´re crunchy and the gazpacho very cold, add them on top of the gazpacho, in small batches, to your heart´s content. Best!

@@allthingsmandy To be fair, there´s a zillion recipes out there, and some people do prefer taking it as a could soup, but it is Salmorejo that it is a really a cold soup you take with a spoon, and Gazpacho, the most popular, and drinkable version of it. If you ever make recipes from Spain, I suggest you make Tortilla Española (which has nothing with Mexican tortillas), since it is THE most popular dish in Spain (not Paella), due to it´s simplicity and nutritional value: it´s basically an omelette made with lightly fried potatoes in olive oil, caramelized onions, and a touch of salt, and it can be made using a single frying pan. It´s supposed to be slightly golden colored on the outside, and juicy in the inside, and it combines with a zillion things. As a matter of fact, a piece of Tortilla with a cold Gazpacho is a favorite combination that many Spaniards would choose to eat by the beach in a 98F weather, as we have today... ;) Best!
