Hello Amena and Elias, your video reminded me of making Injera many years ago, when an Ethiopian friend showed me how to do it. She said I should use one pan just for Injera and not for anything else. So I did. And because my family loves Injera, I made it many times. Even short time ago, I made Injera for some canary friends, who never eat it before and they really liked it. Thanks for sharing the video!

Spread salt covering your griddle, let it set for about 10 mins on a low heat. This helps me to give my injera perfect eyes.

Let me tell you adding “absit “ isn’t a good idea. American injera is different 😂 This is exactly what happened to me when I tried to bake injerawhen I came to America. I tried for 1 year and gave up. Just like Ethiopia, it didn't work for me. Mix the dough well in warm water until it becomes thin,( with a lot of water, double the amount of the dough) then leave it for two days and after two days drain the excess water and bake it. If the dough is too thick, I use its own water to thin it out. It is not good to add new water, it spoils the injera. Also try to get “wase mitad “ if you can. That’s the best one.

Use Teff flower called “Meskel Teff” and mix it with some Barley or Wheat and Absit works it just needs the right amount

I bought mitad from Marshall's long time ago and it works great, cook it on top of stove. You just need to mix the dough with warm water and do the absit for brown teff on the same day and add 1 teaspoon of bread yeast after mixing it with handheld blender, let it stay in warm area for a day and works like a charm. You will get a beautiful injera with the eyes 👀 popping.

The teff here is different. Even if its shipped once it get here the chemistry with water and environment is different. Take your mom to a local Ethiopian church in Texas they will know what works best. My mom was making injera on her own by the age of 9. When she got to the Us 30 years ago it took her a year to figure it out. Back then teff was impossible to get she has made injera with every flour imaginable even rice flour lol. You got this Mama. Dear Amina, I so(!) feel your pain, because I have been going through the same experience for the last two weeks! We bought the seasoned iron cast pan and wasted all my injera batter, however I was more successful with making Kitcha on it(sorry, I don’t know the Amharic word for Kitcha). Unfortunately I ended up buying the Addis griddle, even though I want to avoid it for health reasons. How happy were you with the ceramic pan though? I couldn’t see how good (or bad) the eyes were on that pan? Thank you!!!

Don’t ever use oil on your Mitad. Use salt instead. Also using metal spatula is so wrong 😑.
