Dear Amina, I so(!) feel your pain, because I have been going through the same experience for the last two weeks! We bought the seasoned iron cast pan and wasted all my injera batter, however I was more successful with making Kitcha on it(sorry, I don’t know the Amharic word for Kitcha). Unfortunately I ended up buying the Addis griddle, even though I want to avoid it for health reasons. How happy were you with the ceramic pan though? I couldn’t see how good (or bad) the eyes were on that pan? Thank you!!!
