Like others have said, Put your Beef Roast on a rack inside of your pressure cooker. Then you fill up the bottom with water but don't let it touch the meat. Pressure cook it like that until the internal temperature reaches 230, This is when it just falls apart and easy to shred, the fat also melts and easy to mix in the meat. If you get a real fatty beef roast the beef tallow is not needed. But extra beef tallow wouldn't hurt. I've made this before and it's came out perfect. Just don't submerge in water and you will notice a huge difference in flavor, You will love it. Salt to taste. When you submerge the meat in water you're basically flushing all the flavor out of the meat That's why it wasn't as tasty. Try it! You will change your mind 😉

Oh man I just made crunchy bits for the first time with my wife. Oh my goodness it’s soooo good!!! Eating it right now!! So delicious! I put a lot of salt and pepper and beef fat and butter (didn’t have enough fat) I did 4 or 5 times in the air fryer for 6-7 minutes at 400. But I put a lot of fat and butter

I cook my chuck in a slow cooker. No salt added, nothing. Once done, I take it out of the juice, set it aside until kinda dries out a bit. Then, I fry it(sear)both sides in an iron skillet, with tons of butter or ghee, until crispy-ish on the outside. Then I shred it and salt it lightly while still in skillet and fry it even more. So delicious. I actually enjoy it more than a ribeye if that is possible. There is something about the shredded, soft meat and crispness that is so addictive!! They key is not to oversalt. I read that someone will shred it and put it under the broiler. Will try broiler next time.

You only put or ever need 1-2 cups of water and dont let the meat sit in it. You never want to ever actually boil beef (unless its soup) that is not the point of using a pressure cooker, you want to pressure steam it tender preserving all its fat and flavor, boiling sucks the flavour and nutrients right out and puts it into the water. Put the beef ontop of a rack that is inside the pressure cooker and fill/keep the liquid below the rack. Hint use beef broth.....

@LenLiscio, my friend, you are boiling the meat. To truly understand the effect, taste a boiled ham and then a honey baked ham or some other high quality ham that has been roasted in the oven. Boiling meat destroys the flavor and texture. Lots of people here are telling you to use only a cup of water (true) and a rack (true) but are missing the magic tool: Instead of the standard short Instant Pot wire rack, use a long-legged rack that will keep the meat completely out of the boiling water. For cooking roasts and chickens, I use an "Instant Pot Official Silicone Steamer Basket." Its legs are at least twice as long as the wire rack that comes with the Instant Pot. Since the meat steams instead of boiling in the water, the fat stays in the meat and water stays out. This makes the meat much juicier and more tender, and it doesn't get stringy and dry like boiled meat does. It works exceptionally well for chickens too, you'll love it.

I'm on 0 added sugar. Only low sugar fruit mostly berries, 16 hr intermittent fasting, Anti inflammatory , no processed foods, no bread, no seed oils. My labs look great now. But bread the hardest to give up I have personal pizza 1x. a week . But amazing difference.

Use more tallow :) Her directions actually say, "you need extra tallow for this". Load up the fat! I will be making her recipe as soon as I get an instant pot and an air fryer.

I just put all my meat in the food processor or big wide blender. Drained it and put it in my melted tallow/ butter mix. Stirred it well and now into the air fryer.

Thanks for the honest revirw of the recipe. Maybe it is the water in the pressure cookin that washes away all the tastiness from the meat. Maybe much less water should be used. Or maybe just steam the meat without immersing it in water

Yes I thought the meat had to be covered in water, but I think that was wrong. Should have been below it and have the meat steamed maybe.. They were still pretty good, except for the burnt ones..

@@LenLiscio I also had tried the recipe after watching your video. I placed the meat in a container and placed the container inside the pressure cooker (ninja foodi max) on a rack. So the meat is cooked with the pressurized steam but not touching the water, which was just a cup, not much. The meat came out delicious as it was but also I airfried them and was realy tasty.

I just found your channel after watching several Michaela Peterson videos. I don't have any health issues but I would love to lose 20 lb. I cracked up because you are exploring carnivore and you also were watching Marcus rothkrantz videos which I also do, it's fun to see how different people eat and how it puts their disease into remission. I just made a rib eye from frozen solid to cooked in the air fryer 20 minutes at 400, it was a really thick steak though and it was quite good! Have you been consistently doing carnivore? I tried and had no energy but I also don't have a thyroid. Maybe I wasn't eating enough. I've done omad for the most part since the '80s.

Hi Tammie, It's been 6 months now that I have at least 1 steak a day, sometimes 2, sometimes burgers.. I used to be a big chicken eater before that, now have no interest in the chicken. I still eat other things like fruit, bread.. ( love bread.. ), sometimes even crappier food. But when I have the steaks, I have no side dishes at all. Amazing how light it feels. Every time I try to do just meat I feel like I am starving to death.. Maybe I'll figure it out one day. First few weeks I just wanted to sleep, but that went away. Once I started eating all this meat, and realizing how amazing I feel, the Marcus products are going stale in my fridge now.. Greens were just going right through me anyway, and gave me some nice kidney stones..

@@LenLiscio for 2 days I have listened to a million videos about how carnivore is starting to focus on less protein and high fat. Every time I've tried it I think I'm eating too much protein and I don't lose a pound despite zero carbs. I am NOW feasting on fat with moderate protein, like 70 g a day. Time will tell. I'll be 50 in April and I suddenly have one knuckle that's swollen and sore so that's what got me back to carnivore. Good luck!

Hey, im doing carnivore, been a week, carnivore light maybe lol, meaning i drink alot of full cream milk, and eat full cream yogurt, add my own vanilla essance and alittle cream to get alittle sweetness, and put lemon slices not squeezed in water just to help alittle cause hate water with a passion, but otherwise bread, fruit ext went cold turkey...went to dinner last night and the chips and onion rings being on my plate didn't even bother me, ate my glorious steak smothered in blue cheese butter...and was fully satiated, i think the fat content needs to be high in your diet and salt important to not get weak... recently a friend who has been doing it for 4 months adviced to electrolite drops that you drop on your tongue for when lacking energy or feeling dizzy at all, not the effirvesant type they have sugar... you might look into those.. hope you get right.

@@nicky23981 excellent you're finding your stride! 🥩 I definitely was doing a lot of salt and have tried every electrolyte on the market but nothing made any difference, I am now just doing animal-based and that seems to work well for me. Lots of fat and protein. Right now I'm in Mexico and I can get a ribeye for like $7. I got eggs and tallow too. Brought my equip chocolate beef protein powder with me for morning smoothies.

Fattier cut of meat. I used Chuck roast. And don’t air fry in aluminum foil. It’s leeches into your food. Use unbleached parchment paper instead

@LenLiscio Put the meat or pork on a rack and only fill it with liquid until it barely touches the rack (1-1.25 cups is enouh liquid for a 6 qt, use 1.5 cups for a wider machine etc). Use salted water or Low sodium beef broth for some flavor or what ever you want. Set it to hi pressure for a time depending on how big it is. Problem with beef is that there is a fine line between it just starting to break apart still very tender and it being over done and dried out especially if its 1 big chunk of beef. So I would cut that chuck into 2-4 pieces and try 45 minutes under high pressure, quick release and stab it to see it if its breaking apart enough for you or it needs more time. This is the same way you would prep beef and pork ribs.😊
