What I found works, from professional bakers is to hold back a small amount of LIQUID instead of adding more flour,and only adjust a small amount at a time when I have a consistency issue. It takes very little liquid - like teaspoons and tablespoons - to make a change in consistency in a single loaf bread batch if the ingredients are consistent. If you're using local or home ground flour, you could see several percentage points difference in protein in the flour, which causes the water requirement to change. My flour source - Janie's Mill in IL - changed their AP (hard red winter wheat) this year from ~10% down to ~8 due to last year being dry, so I opted for a blended flour (both HR winter and HR spring wheats) that works better for my bread.

Beautiful results. I swear I just got a whiff of fresh baked bread while I watched. The part about not going higher than a #2 with the bread hook applies to all Kitchen Aid stand mixers not just the commercial.

Have the same mixer and we invested in an extra bowl and beaters since I bake a lot daily and having extras means I don't have to waste time washing bowls and beaters when making something that calls for beaten egg or whipped cream mixtures that have to be added to another mixture.

Beautiful job, Bev!! I'm so jealous!! I only have a KitchenAid Pro, and yours will do even more than mine! Maybe one day I'll have a commercial model. On another note, I hope I can convince you to get a large Cosori dehydrator - Besides using it for dehydrating, I use mine on a 95 - 100 degree setting as a proofing box. I just let it run and it works wonders on a cold day! I also use it to make a gallon of yogurt at a time and strain it into Greek yogurt. Save the whey off the strained yogurt and use it in your bread - It adds a rich flavor and a lot of protein.

I have one of those mixers. I do everything off of it. I put the bowl on last. I add yeast and liquid sugar. With the bowl off the mixer add flours than put it on the mixer put hook in and go, No need to even scrap the bowl down. After it comes together I time 7 to 8 min. on speed 1 never faster. Take that cage off and toss it. Always measure with grams in that it's easy to make a dry loaf. It only makes 3 loaves at a time or it will climb out of the bowl. It's really not a commercial it's just stronger the the smaller counter top model that you have. Have fun it does big batches of chocolate chip cookies....lol. I use my smaller mixer for cakes so it doesn't get jealous....

I've noticed that whole grain flours tend to need a little resting time to hydrate properly- I wonder if that's why your dough felt a little off before you let it rise? I always give any doughs I'm making with whole grains a bit of time to relax mid-mixing process because of that.
