I was about to ask the same question. The pricker I got needs a 19mm hole in the mortise as it's 18mm itself, so assume you drill 19mm holes then and use a tapered peg that goes out to 19mm in the end?

Interesting little detail of the big build. A spoke shave would be ideal for this, I reckon you'd whittle through them in no time the old fashioned way.

Make sure you brace each side before you go and have a cup of tea, the whole back side fell down on mine at tea break! Didn't catch it on film though 🤭

When I was 17-ish, I cut a whole bunch of these, which took forever, and made them from what looks like firewood. I didnt know anyone used "milled" lumber. (lol).

Just wondering if you could push the pegs through a die by mounting it on a hydraulic log splitter, obviously if you need to make quite a lot. I'm suggesting hydraulic for control.

You need WAY less teeth for resawing those boards on the bandsaw. Get a blade with the least teeth and deepest gullets you can find. You only want 3-6 teeth in the wood at a time.

The hole peg hole off set being due to pulling the joint tight is not true. The idea of off setting the hole is so as the timber drys the joint stays bearing on the tennon saddle and doesn't shrink and end up bearing the weight through the peg. It does pull things tight and look nice but that is not the off sets primary job. Jelous on the workshop by the way nice job! And also loved the lead videos that guy had skills!
