Brought back some memories of the Yellow Awning (we Gaijins called it) in Chiba near Tokyo. It was a popular little airline dinner hangout. The gyoza and tonkatsu were amazing…washed down with a Sapporo. Japanese curry is my favorite curry. Oishidesu ne? My mother was Japanese and she made curry all of the time. She would make it many different ways. She would dice chicken, beef, or pork meat and cook it with the vegetables. She would make it without the meat and then we would eat it with tonkatsu, chicken katsu, or karage. She would slice an apple or pear and put it in with the veggies for sweetness. The apple would disappear during the stewing. The also make an instant roux that you can buy at most Asian markets if you are in a hurry. It is almost as tasty.

Crushed Rich crackers provide a breaded coating very similar to panko but more of a buttery flavor. I couldn't find panko one day and I tried the Ritz crackers. It worked out so well I also then tried club crackers which came out similar but not as buttery. In one of your upcoming episodes where you do a breadcrumb style batter breading would you please give a try to one or all of these options and state your opinion. Sam,waiting for you in Japan, let me know if you could use a guide. I’m a CocoIchiban curry fan too - fully agree it’s the best comfort food ever.

Weird I was just thinking of making japanese curry tonight. But I usually do it with beef like a stew, its excellent with a poached egg on top.

I loved the top ten series. I wish that you continue it now that things are easier. I want Africa, Poland, Australia, New Zealand, and the multitude of Scandinavia as well as everywhere. Only when your ready of course.

Sam, your videos are always so inspirational and open my mind to possibilities! Since I am trying hard as hell to avoid starches = no rice, replace with riced cauliflower, something else (water chestnuts?) or nothing. And no potatoes, replace with mushrooms and celery. Mushrooms and celery are often in Japanese dishes.
