This is a very random comment, but I have diagnosed OCD and this gardening/foraging video was really helpful to me. One of my main obsessions that torments me is food contamination and the idea that food will make me sick/kill me. Watching you calmly narrate and continue on as you found a snail in one vegetable and a partially gone off piece of another that you just cut off and continued with was extremely soothing as a person who isn't currently able to consume food that doesn't "look" safe and uncontaminated. I end up throwing away some produce every week because of this, and I hate it (my wallet does too!). I know my fears and disgust aren't rational in any way, but of course anxiety is not rooted in logic at all. The way you were so calm and nonchalant about finding fruits and veggies in their natural state was extremely comforting to me, and will help me to rethink food waste. I appreciate it a lot

There's an exception to this... removing the visibly mouldy bits from bread doesn't really remove it. By that stage the bread is thoroughly infected.

@jpaulc441 I assume that any food I see with visible mold already has lots of invisible mold that I can't see. I also store my bread in the freezer though because I'm traumatized by bread mold 😂

Mould really is only a problem/issue in things like fruit and vegetables but cutting the mould off cheese is perfectly safe. It’s mostly foods that are very Porous

A recommendation for a glut of runner beans, my parents make Indian spiced runner bean chutney. I am unsure whether this is a recipe my Dad has made up or one he read in a cook book years ago, but without fail he makes some every time he has runner beans in the garden and I go through jars of the stuff. It's amazing with a blue cheese and tomato sandwich and with a left over roast chicken.

when I first started making chutneys, I thought like you that they were 'ready for use'. We made some and a few days later tasted it. It was terrible! So vinegary. The rest of the jars were left in the back of the self. Over a year later we found them and opened one before we were going to throw them. It had matured and was fantastic! That started my journey on chutneys and jam making.

You inspired me to start gardening! I've been really enjoying it, and I believe it's been helping my mental health a great deal. I just purchased a little pop-up greenhouse, and it's been so rewarding watching my tomatoes, potatoes and herbs grow. Finally, tasted the first of my cherry tomatoes a few days ago, and they were perhaps the sweetest tomatoes I've ever eaten. Thank you for the videos, they're a continuous source of inspiration for me.

Never thought about adding elderberries to pickle, but they do make an excellent home brew country wine. I've been lacto-fermenting courgettes so much this summer I've used up all my jars.

If you have lots of elderberries have you thought of making Pontack Sauce? It’s very easy to make but you have to leave it to mature for quite a while. I made some a couple of years ago but haven’t tried it yet.

I did some gardening in pots a few years ago since my house had a concrete yard rather than a garden. Quick tip - if you go to Morrisons supermarket in the UK and hunt around the flower section, they do actually sell the big plastic pots the flowers come in. I used to get maybe 10-20 for 10p each. They are absolutely perfectly sized for a tomato plants and it's great to be able to re-use something that's headed for landfill. Just need to drill holes or heat up a skewer (I used an old soldering iron) and make some drainage holes. I'd just water once a day and feed them once a week and they were happy. Used to grow Gardeners Delight and MoneyMaker varieties and always had enough to make Ketchup and a huge batch of tomato passata for the freezer. Even if you only have a little balcony, you can happily have a tomato plant growing and my word are they delicious fresh.

I make runner bean chutney every year. It's become a family tradition and they all live it. I do have to make it with cider vinegar though as one of my daughters can't have gluten. Its yummy. Love your videos 😊.

Those little pear-shaped tomatoes are sold here as "candy tomatoes", and they're intended to be eaten just as a snack in between meals. They are quite sweet, similar to cherry tomatoes. We get em at the office along with mini cucumbers, on the snack tables 😋

Ah, those elderberries reminded me of when I was a young'un. We had a huge batch of elderberries to get through every year, and it usually got turned into soup. Loved that stuff.

Those super tomatoey tomatoes are probably Sun Gold. They really do have a fantastic flavour, and they're very sweet. I've never seen them in the shops, and the seeds are quite expensive. They're an F1 hybrid, so the seeds are sterile. You'll have to buy more seeds next year. My Nan's elderberry wine was delicious, but she could make wine out of anything, rest her soul.

I make a very similar thing but instead of courgettes and prunes I use fresh plums, and I boil it down to about the half of the original volume. It's good stuff but you have to keep it canned until at least Christmas time.

I couldn't have resisted to sauté the runner beans, onions and tomatos in butter, spiced with garlic, pepper, salt and savoury. That's the vegetarian version of beans with bacon, and it is as tasty as the original! ❤️

Do you make Kimchi or Asian-inspired pickles? It's SO much fun and very easy. I got a 2-piece glass kimchi jar from Amazon and add whatever vegetables I want to ferment plus some cabbage, some gochujang and other spices, garlic, etc. You can make it as spicy as you want and there are so many recipes ... after mine is as "sour" as I want it, I load it up into jars and keep them in the fridge - it lasts a long time. You can also can it ----- give it a try!!!

Elderberries are still used in red wine making, maybe not industrially or even for huge productions... but homebrewers use it, liberally, because is does make wine most awesomely profound, round and fruity!

I used to love making pickles, jams, preserves but my wife does not like any. So after taking nearly ten years to eat through my stock I stopped. I do miss it though. I need to make some cucumber pickle (Pam the jam's recipe). with marmalades, I waited until the supermarket had some say grapefruit in the reduced and then make a few jars of jam. Pink grapefruit marmalade is very nice! Lime marmalade home made is so different from shop bought.

Every summertime as a kid we would go down the woods and build dens or dams and for food we just went scrumping apples pears plumbs nuts and hand fulls of elderberries, I'm still here 50 year's on, the people's gardens that backed onto the woods didn't like us grabbing the fruit but we could out run most of them 🤭. Hopefully next year I will have my allotment back.

Using a veggie peeler on runner beans is brilliant. I try to wait until the end of the video to comment, but, that was just🤯. Removing the strings from beans in prep for canning was my most hated chore. So many strings

I grow my food at my allotment. Got a great crop of veg & fruit. Making lots of frozen veg, Jars of tomato & basil sauses, Chillie sauces, pickles, Chutneys, jams and ciders, wines etc. I will want for nothing this winter. I highly recommend you all grow your own. Better than supermarket processed foods👍👍🌻🌻🌷🌷🍅🍅

yum! I want to make chutney!! I've been making bread and butter cucumber pickles- which would also work well with your courgettes (?) we call them zucchini. Anyway- turmeric, black pepper, ginger, mustard seed, onion(lots), celery salt or seed. sugar, vinegar. so so so good I water bath can mine - I'm a chicken. I'm here to report that cherry tomatoes can beautifully. Just poke holes (about 4 in each) and put a tablespoon of lemon juice and half teaspoon of salt per pint jar. Pack the cherry tomatoes in with a bit of a squish and water bath about 20 minutes. - summer in a jar

So, AS, this is a little late in the making, but this evening, after two days of preparation, I have a jar of a mix of peppers and cucumber that I am turning into a lactofermented pickle. Not quite as long as yours tend to ferment, but it is sitting and waiting for at least 2 weeks before I get to try it. Wish me luck.

I've had tomato horn worms on my tomato plants in years past. But this year a few of the fruits had a small worm burrowing inside. Never seen that before. I have no idea what kind of bug they are from. I only grow tomatoes because they are so easy & we love tomatoes. I've had my best crop ever due to several timely rains. I've been freezing the excess to enjoy this winter.

I'd love to make this at home. This style of pickle is one my favorites, but it's so hard to source it here in the states. Even Branston is only rarely available at the local markets. I did have a question for you, or anyone in the viewership who might know. I prefer a less sweet pickle, and have diabetes, so would like to decrease the sugar somewhat besides. However, I know the sugar is an important part of the preservation process. Do you happen to know how much I could safely reduce the sugar content without running into issues? I don't want to remove it entirely, but I would definitely like to decrease it fairly substantially. I would appreciate any insight, as I'm not very experienced with pickling or home food preservation in general.

The pepper looked something like what is called a Fresno or Hungarian Hot Wax.Kind of Medium Hots like Jalapenos.Chutney is a little strange to me,like sweet chili sauce.I have never had pickled beans but I do love 5 bean salad which is a sweet,sour,salty dish with various beans,cooked bacon and a vinegar and sugar sauce.I use the bacon grease for the dressing oil.It's "more better"(as Cajun Cooks say) than oil.

I have to admit that for a second, I found it odd that you weren't discarding the piece of the pepper that the snail had obviously been eating or crawling on, but as you said the simple words "i'm not" I did realise that it really isn't an issue to keep those bits. It may seem "dirty" but when you're heading into such a long cooking process, anything left by the snail will vanish anyway!

I do believe we have all of the ingredients in our allotment and dried figs not prunes. We also have just pick up a lot of fallen apples due to the high winds of late- think these will add to the pickle flavour. so it will be a slight variation of you pickle.

When tasting chillies, taste the white membrane that supports the seeds (then’placenta’) as that is where the capsaicin resides.

Yes, I get the idea behind the smoother pickle. But it's a shame to not have the gorgeous tomatoes visible! I love elderberry jam, it is really good. Unfortunately we were on holidays when they were ripe. I need to find some trees that are more in the shade. My main source is beyond use.
