It's been a little over 2 weeks since I picked my green walnuts and began the process of pickling them - in this third and final part, we'll look at the process of dry ageing the walnuts, then pickling them in a spiced vinegar syrup
The ingredients for the pickling syrup are:
125g Molasses sugar
325g Soft brown sugar
500ml Malt vinegar
2 Tablespoons pickling spices (coriander seed, mustard seed, cloves, ginger, chilli, allspice)
1 small stick of cinnamon
(scale up to make more depending on how many walnuts you are pickling)
