Making Pumpkin Syrup - Includes Actual Pumpkin Spice Latte

When I cooked my 'carving pumpkin' to make pumpkin pie, a lot of watery juice came out - I tried some of this straight and it was mildly sweet and moderately pumpkin flavoured.
In this video, I reduce it down to a syrup, spiced with nutmeg, cinnamon, cloves and allspice, and serve over waffles and coffee

We did a lot of experimenting with pumpkin this year. We made a pumpkin latte with puréed pulp in coffee. That also worked really well. Syrup is more versatile however, so thanks for the tip!

What a brilliant idea! I have our larger pumpkin (it was a whopper) washed and cut and baking in the oven right now. I knew it would make a lot of juice but how interesting to have an idea to try to use that up, too! Usually, our pumpkins have been out for a day or two and not really fit for even more adventurous food purposes. But this year we were completely "last minute". One advantage is that, for the first time, we can cook up our pumpkin and see what we get -- it was cleaned and carved yesterday afternoon and into the oven this morning at about 10 am -- two baking/roasting trays stacked up like yours. I'm sure that this isn't perfect food preservation but we're OK with it. It's only for our own consumption and it will definitely be very, very well cooked by the time we're through. :-)

For anyone that wants to know if you're not a fan of bitter coffee stir in a pinch of salt and it'll blocks the bitterness but when I say a pinch I mean a small pinch anything more than a small pinch and it'll ruin your coffee

This works really well with sweet potato cooking water as well (when you steam them). I accidentally left a pan on the hob for a bit long and the liquid started to turn into toffee and tasted delicious.

Random thought, could freeze the pumpkin syrup with some black coffee in and serve the coffee and pumpkin cubes in milk for an iced latté!

I wish something like this was on the markets or something . I really hate maple and corn syrups (fake honey) and honey itself is overpoweringly sweet , this would definitely be a perfect "middle group" where it doesn't just sweeten but also adds flavor.

I see no reason why not. Might be worth freezing in ice cube trays so it can be defrosted in small portions

Someone could buy up all the super cheap leftover pumpkins after Halloween for pennies, then cook them all down into gallons of "gourmet" syrup and sell for pounds. Now if I could just find an industrial size pressure cooker...
