Awesome steam kettle! I love to cook big batches of food, but I certainly don’t have a pot that big! If I had one that big, I’d consider putting it on a trailer with a good size gas tank, find a group to volunteer with and then go to disaster areas cooking up big batches of free food for the volunteers and local people who aren’t able to cook food or get food.

I grew up in Baltimore City eating RAPA scrapple that my mother dipped in all-purpose flour seasoned liberally with salt and pepper. In our household we ate fried scrapple with tomato ketchup. The play of the cane sugar sweetness which was offset by the sourness and acidity of the vinegar in the ketchup, as well as the tomato flavor profile made for a perfect foil against the fattiness of the scrapple. Nowadays, I use Primal Kitchen sugar-free ketchup instead.

There's a local deli in downtown Baltimore City that sells a breakfast sandwich that they call a *"Hobo."* It consists of the bread of your choice *(white, wheat, rye, bagel, biscuit),* the meat of your choice *(ham, bacon, turkey bacon, sausage patty, scrapple),* one *egg* cooked the way you desire, and a very generous portion of *mashed potato hash browns* fried until both sides are crispy. I purchase mine as follows..... *Toasted and buttered rye bread* *Sliced yellow onion* *Egg fried hard* *Salt and pepper* *Scrapple fried extra crispy* *Hash browns fried extra crispy* *Swiss cheese (extra cost)* A *LOT* of the locals that live in the area or who work in the downtown United States Mail Distribution Center and the Baltimore City Juvenile Justice Center add *grape jelly* to their Hobo sandwich.

That unit is known as a self contained steam kettle, meant for places that don't have a live steam generating system. I wish Micah would have shown the build spec plate for this jacketed steam kettles, would be nice to know how many gallons it was. This kettle would also be good in a beer home brew system all it needs is a false bottom to keep brewing grains from draining through the draw off spout.
