the "but better" series is so fun to watch and is also very helpful for people who want to make those recipes at home but I just love that it tends to end up being "what if fast food was slow?" a lot of the time. It really shows how much of a difference ingredients and time makes when you're making food. definitely one of my very favorite series to watch!

Josh - I love your videos. I'm a retired chef myself. The "secret" ingredient to perfect taco meat: do just what you're doing, but finish with a slurry of the pan juices mixed with masa flour. This adds that subtle flavour and acts as the binding agent to defeat the "crumb" of the meat. Trust me - it's a good thing.

To make a ranch taco shell would be even easier, although you really couldn't make it from scratch. But just use ranch dressing mix. You can get powdered buttermilk, add a little of that into the ranch powder, spray the tortillas with oil, dust the seasoning on them and fry 'em up.

My copy of the book came yesterday. The wide variety of recipes is great, and there's a lot of photos of both the completed dishes and for steps that might be hard to describe like the stages of caramelizing onions for the french onion soup. It's a really nice book overall.

@@angelinesamuel1821 There are 12 recipes in the "Meat" section, of which 5 appear at a glance to use beef or pork. There's a couple others scattered in the other sections that look like they'd use beef or pork, but way more seem to use chicken, and I'd guess about 2/3 of the book isn't meat based at all. That said, it's hard to tell which recipes might ask for beef broth or similar from looking at the table of contents. Hope this helps a bit.

So far we've made the beer battered fish, gnocchi, Graham crackers, and wedge salad. Everything has been amazing. They look complicated but everything looks that way when you haven't done it before. Break the recipes down into steps: ingredients, cookware, time (prep & cook). First time you try it it'll be hard but you can learn which areas are difficult and why, then make the needed adjustments to make it easier the second time around.

I watch a lot of your content and respect your approach on food. I have a challenge for you!!! You make the item your going to challenge first. Therefore, when your blind taste tester try’s the entree, it’s a real testament of how much better your product is in comparison. (I still believe yours would be better.) However, after cooling and congealing, or what other factors may occur, it kinda evens the playing field. I believe the invert to your approach would be an exciting challenge that I would love to see. I’m curious if you ate the items immediately, before, and while eating with yours, would the outcomes be different.

@@Thetoxicpeaceful1 no because it dosent take effort to make. im talking about spending 20 to 30 minutes cutting up the ingredients and preparing it to make like a fish stew or something. thats when you truly appreciate the work you put in.

I work at a bookstore in San Francisco and last, last week we got your Unapologetic Cookbook in as a new release. I always check out the new cookbooks. Dude, a near perfect cookbook. Nearly every recipe spoke to me, all the sauces, pasta making, flour tortillas, all-of-it. I might even decide to like avocado after seeing your Avocado Toast thing! Anyway, bought the book right there, and, now that I've heard of you, found your channel. SUBSCRIBED!!! Good job, brother. Now, related to this video, can you do one on how to make Taco Bell MexiMelts. Not on the menu anymore and I miss those things.

PAPA HAS CREATED THE PROPHECY Fun fact: the Doritos Locos Taco broke record sales in fast food history for the most money made on the release day on what was going to be, at the time, a limited edition item. Obviously they had it stay on the menu after its success. :D
