I am the same way and have a plethora of dietary restrictions. I know you didn't ask but I recommend removing seed oil from your gf's and even your diet. I'd do some research on it to determine for yourself but seed oils are terrible for you. Best of luck !

I think the reason I resonate so much with Josh's cooking is because of the attitude. He knows when he's side-stepping things for better flavor or better texture and doesn't apologize for it, just leans into it even harder because hey, it's his food and that's what he wants to do. Gotta love it.

What do I need to own? What are the basic steps? Most important how the hell do I clean up afterwards, and what are the dos and dont’s of reusing the oil?

Heavy pot like a lodge ceramic cast iron 6 qt. Neutral oil like canola no more than halfway up the pot. Long thermometer with clip to attach to pot of oil to know the temp of oil. For chicken and most everything else cook at 350f. Don’t add food till temp is ready. Add food away from you so you don’t burn yourself. Fry turning occasionally. Get an instant read digital meat thermometer. Check food like this chicken to make sure it’s at about 155-160. No more than that! Allow oil to cool all the way. Pour oil through a coffee filter into the empty bottle the oil came out of. I don’t reuse my oil more than twice after the initial usage. Clean pot in hot, soapy water. Dry and put away till next use! Also helpful to watch lots of deep frying videos!

@@blaiseradley you want it to return to that 350 temp. Once you do it a couple times, you should memorize which numbers on your stove makes it work. For example…. #3-4 on my stove just about does it. I just turn it to that number, and the oil will max out at that temperature.

Just made this a couple of days ago and it was so freaking good. Only had to make two changes: 1) Gluten-free flower as my wife has gluten intolerance. 2) Couldn't find celery or mustard seed powder, or MSG, so I substituted those with Vegeta (Central Europeans/Balkans represent!) Came out absolutely delicious. Only negative was a bit too much salt - I forgot how much salt is in Vegeta. When I repeat this recipe (and I will, because my wife is asking for it again ASAP) I will probably only use max 1 tablespoon salt, as the 1.5 tablespoons of Vegeta I used already is about ~50% salt I think.

I really want your book Josh, I do. But I just know that every recipe in there is going to be a minimum of $97 and a hellstorm of exotic ingredients that I have no way to get.

You may be right, but you can sub some cheaper ingredients. I've made his barbacoa recipe with chuck roast a bunch of times and it is jummy.

Most of the things that are hard to get are optional on his recipes and when I make them I rarely have to go to the store for new ingredients

to be fair while doing everything at home is way better and cheaper. occasionally getting a sandwhich from some fast food place and just mowing down is really really nice. ty for the vids though bro. they were super helpful!
