i have followed your cast iron posts on youtube, facebook and instagram and it makes me so happy to see that you are using a weber kettle now too. cast iron and weber kettles are my favorite methods of cooking and everything you cook always looks great!

This is the first I'm hearing of the vortex. I like it. I've been using this cooking method for at least 20 years now by just stacking the charcoal briquettes in the center of the weber grill the best I could. I do one more step than he did though. After basically baking, or in his case smoking, the chicken for about 45 minutes, I start moving the pieces a few at a time to the center over the charcoal briefly to get that crisp skin he kept mentioning. Then, when they're all browned up nicely and back to where they started I sauce them. Dumping the charcoal from the chimney into the vortex would make things easier. Nice.

Try putting your wood chunks to the outside edges of the vortex. More smoke, wood lasts longer. Great video!

I think it would be similar but you’ll lose some cook space due to the angular design of the baskets. Plus, the baskets have some holes in the sides which will reduce the updraft of heat.

Are you using the Vortex on a regular sized Weber kettle? I have the Performer and was just wondering if the Vortex was a good "Fit" for it.But their website says this about using on the weber."Will not fit Kettle Grills sizes 18.5" through 26.75"

Can't find the vortex for sale in the UK, I might try just placing weber baskets in the middle for an experiment. If that doesn't work I might try a large tin can with both ends cut off.
You can use a bowl-pot stainlees steel in a flea market good will o salvation army. $ 1 0r 2 dls, Cut or make some holes in the boton. Now you have the vortex.

I simply use their regular indirect cooking method with a coals on each side and I use a rib rack and stack the wings two high. I use Heinz 57 and honey put it on 20 minutes before I take it off. Absolutely to die for.

I bought a vortex and the grate with the removable center Filled the vortex as shown here. At the half hour mark they were not cooked. The heat was not intense at all. I used Kingsford charcoal. Started in a chimney and dumped in the vortex. After an hour the wings still were not done. Took them off and finished them on my gas grill. I have no clue why it didn't work. And yes my vents were full open. Please help.

I just purchased the vortex and was curious about my pit temp. I usually cook my wings around 325 to 350 degrees. Will there be a problem keeping the temps at this range or will I have to cook at a higher temp just because I might not be able to lower the temp? Maybe the nature of the beast?

There are several ways to grill and smoke on a Weber Kettle Grill. This configuration is an indirect heat method - the heat is in the center and the chicken is placed around it on the outside. With indirect heat methods, typically you use lower temperatures and cook slower. There are a few other configurations that you can search here on KZbin, but the Weber is a very flexible and inexpensive way to grill or smoke.

The trick to really crispy wings is to add some baking powder to your rub.It causes a chemical reaction with the chicken skin.

I did it with vents wide open. 30 - 40 minutes total time. Mine got up to 500 degrees F according to the therm on top. Came out just like the video. Save saucing to the end of cooking to let skin get crispy.

Hey man I just got a Weber kettle and a vortex to go with it. I'm thinking about trying out this configuration this weekend. Question though, when you start your coals did you pour the lot coals down into the vortex or fill the vortex with unlit coals and light them from the bottom? Thanks man!
