My grandma used to make an oyster souffle something like this every Thanksgiving, bless her heart. In her later years, her eyesight got bad and she couldn't drive to get fresh oysters. Instead we just ate it with nightcrawlers and other critters we would find in the yard.

It's going to be too sticky and burnt if they use small amount of oil

@@ehtop7117, tapioca flour mixed with water. Basically this dish is made up of tapioca flour mixture, eggs and oysters. Officially is "fried oyster omelette"
