I've noticed there is two "styles" of chilli pan mee, one is the traditional one with ikan bilis, pork mince and poached egg, while the other is more common in kopitiams which use black sauce and mushrooms instead of egg

Fun Fact: Pan Mee is Malaysian Hakka invented cuisine, original name called Dou Ma Cet. 刀麻切. While the name Pan Mee is later renamed by Hokkien Peeps. That's why there is no Pan Mee in China. The "Pan mian" in China is totally different thing. So if possible, just call it pan mee. Pan Mien is confusing

Just tried this recipe! Its legit good. But the thing is it’s too spicy. I put five cili padi and my lips is burning 🙈 Is this because I didn’t deseed the dried chilli or the cili padi (in M’sia is much more spicy) * I’m someone who can tolerate to high level of spiciness*
