I've only entered into one chili cook-off. I made your smoked chili recipe. I had to make it ahead of time due to weather - we had a snow storm coming, so I rolled the Yoder out, smoked the beef. Then made up the chili and put it in vacuum sealer bags and froze it. The night before the comp (three weeks later) I thawed the bags. I got it warmed up good the next day. And - bam - they couldn't stop eating it. Since it's just me and the wife, I'll seal up double portions in vacuum bags and we can roll out the chili any time we want. I can't wait to try the bonafide seasoning. I got my shaker of it today. I'm gonna try the recipe you have on the website for it using some buffalo from a local source here in Wyoming. Thanks for the great products that make it more fun because it's more delicious!

Hey Malcolm, do a video on your pulled pork chili lol. I learn best by watching ya. I've used about 12 of your recipes, you taught me how to smoke and are always my go to for football food recipes. I live and breath by your seasonings lol

The base of a white chicken "chili" isn't just the dairy products you listed, but also some of the white beans blended to make it thick.

I'm sure that's a ton of fun and that you just have a hoot doing it that way, but it helps for winning cookoffs (what this video is about) to have a base recipe to use. You can always continue to update the recipe to get it just right, and it's still always good to taste as you go. If it's just for you and the fam, or you don't care about winning a cookoff you enter, then be total free spirit!
