Beautiful, beautiful ribs! When I want a little char in my ribs, I hang them vertically in my WSM. They don’t turn out as pretty but the flavor is on 10.

Thanks for the video. I've done hot and fast ribs before but at 350 degrees and found that the fat and connective tissue didn't render enough to make the ribs juicy..

Thanks for watching. I think 300 degrees is the perfect temp for a faster no wrap that still allows the ribs to cook well. That searing of the glaze was a great touch too, I'll be doing that again.

I don’t know brother, that was a nice looking rack before the char. Having said that, it didn’t look as bad as I thought after the burn. I am sure it tasted good.

🤣🤣 I know Lowdown..... but I really wanted to taste that glaze combo with a hard sear on it. While it wasn't as pretty, the char really set off the grilled flavor! So worth it!

Thanks for watching Gamer. I left the membrane because it was a high heat cook followed by an even hotter direct finish. The membrane helps to maintain moisture and hold the bones intact. After that finish is pretty crispy and you won't even know it's there.

There is no reason to not take off the membrane. You are wasting the rub by putting on the membrane. Not sure why you are cooking at such a high temperature either. You’re not getting smoke flavor in the ribs. You might as well cook them in the oven.

Well to start, the rack was GRILLED and not smoked.... as stated in the title. What's your reason for removing the membrane? My reason for leaving it on is because I was cooking at such a HIGH temperature, I wanted to make sure the bones stayed intact like they did! At those high temperatures, that membrane cooks to perfection.... like it did. I've got numerous rib cooking videos on this channel and all of them are cooked different ways, on different pits/grills and different temperatures. I'm very confident that way! I season both sides of a rack because I want both sides to taste good. 🤣🤣🤣
