Adding lemon juice to almond milk has worked for me as a buttermilk sub...and sometimes I get really lazy and just add a TBS of lemon juice to my recipe at the same time I add the plant-based milk, rather than mixing them together and letting them sit. It adds a very slight mild twang and/or coagulates with some of the protein in the "milk." I think what I love most about your meal prep videos is that you make it ok to substitute, experiment, omit and otherwise not be PERFECT, which is soooo important.

Dice them up throw them in a casserole dish and then add whatever breakfast meat you want, any veggies, add some cheese and then mixed eggs with milk and then poured over the top let it sit overnight and then bake it in the morning. The bread soaks up all the goodness and it’s delicious! Like bread pudding but breakfast version.

18:00 breakfast casseroles: hi Wads! I'm in the UK and breakfast casseroles are not a well known concept. I explain them as a Full English Breakfast in a bowl. My English recipe for one is diced bread, with an egg/milk/s&p mix soaked in, then a layer of chopped back bacon, a layer of sliced sausage, some baked beans and topped with cheese. My 12yo and 17yo sons absolutely love it

So funny with your cookies! I hope the next batch turned out better. And I purchased a similar salad bowl from Amazon, they are so nice, and easy to wash and use over and over. And if you leave one at a neighbors house, it’s not a big deal.

My favorite breakfast casserole is: Brown hash browns and put on the bottom of a 13 x 9 pan. Next layer is cubed cooked ham, sprinkle with cheddar cheese. Mix 10 eggs with 2 cups of half and half and salt and pepper and more cheese sprinkled on top. Bake for 40 minutes at 350 degrees. This is a great base, too. Replace ham with sausage, add onions, jalapeno, any kind of peppers, etc. It is delicious.
