I am sharing my recipe a Mango Coconut Chia seed pudding recipe. Chia seeds contain large amounts of fiber and omega-3 fatty acids, plenty of high quality protein, and several essential minerals and antioxidants.
Its a delicious make ahead breakfast that takes just two minutes to put together. This recipe is very helpful for weight loss and can be customized in many different ways.
As Mangoes are in the season now and the days are getting hotter day by day, this chilled chia pudding serves as a great alternative for a quick breakfast or a guiltfree snack.
Ingredients
Pudding Base
Coconut Milk - 1 cup
Chia seeds - 3 tbsps
Maple syrup/Honey - 1 tbsp
Topping
Mango - 1 cup , chopped
Maple syrup/Honey - 1 tbsp (optional)
Dessicated coconut - 1/4 tsp
Sprig of mint for garnish
