Ingredients
Red snapper fish slices - 400-500g
Mustard seeds - 2 tbsp (for grinding)
Green chillies - 4-5
Turmeric powder (haldi) - 1 tsp (plus extra for marinating)
Red chilli powder - 1 tsp
Cumin powder - 1 tsp
Mustard oil - 2 tbsp (plus extra for cooking)
Salt - to taste
Onion seeds - 1/3 tsp
Cumin seeds - 1/3 tsp
Fenugreek seeds - 1/3 tsp
Tomato - 1 medium, sliced
Raw mango - 60g, thinly sliced
Semi-ripe mango - 60g, thinly sliced
Fresh coriander - for garnish
Water - as required
Process:
• Prepare the Marinade: In a grinder, combine mustard seeds with a little water and blend into a paste. Add green chillies, 1 tsp turmeric powder, red chilli powder, cumin powder, and 2 tbsp mustard oil. Blend until smooth.
• Marinate the Fish: Season the red snapper slices with salt and the remaining 1 tsp turmeric. Let it marinate for about 15-30 minutes.
• Cook the Spices: In a pan, heat some mustard oil over medium heat. Add onion seeds, cumin seeds, fenugreek seeds, and mustard seeds. Once they start to crackle, add the mustard paste. Cook the paste for a couple of minutes, then add a pinch of salt.
• Add the Fish: Gently add the marinated fish slices to the pan. Add the sliced tomato and mix gently to avoid breaking the fish.
• Add Mango and Water: Pour in water as needed to create a curry consistency. Add the thinly sliced raw mango and fresh coriander. Gently flip the fish once to coat it in the curry.
• Finish with Semi-Ripe Mango: Add the sliced semi-ripe mango and simmer for a few more minutes until the fish is cooked through and the mango is tender.
• Serve: Garnish with fresh coriander
