Composed of a soft coconut biscuit, a creamy vanilla mousse, a fruity mango-passion insert, a milk chocolate crisp, and a bright mirror glaze, this log subtly combines exotic textures and flavors.

Ingredients:
For the mango passion insert:
*145g mango passion coulis
*2 egg yolks
*1 egg
*25g caster sugar
*20g unsalted butter
*2.85g 200 bloom gelatin sheets (this corresponds to 1 and a half sheets of Vahiné gelatin for example)
For the soft coconut biscuit:
*25g almond powder
*30g icing sugar
*2 egg whites
*10g caster sugar
*30g grated coconut
For the vanilla mousse:
*4g 200 Bloom gelatin
*30g egg yolks (usually 2 small egg yolks)
*100g whole milk
*30g caster sugar
*315g whole liquid cream 30% fat minimum
*1 vanilla pod
*5 grams of vanilla extract
For the milk chocolate crisp:
*70g of baking milk chocolate
*40g of lace pancakes
*7g of sunflower oil (or grape seeds)
For the mango passion mirror glaze:
*150g of acacia honey
*130g of powdered sugar
*80g of mango passion coulis
*75g of whole liquid cream 30% fat minimum
*150g of baking white chocolate
*9.5g of 200 bloom gelatin sheets

Je n'ai pas de purée mangue passion, j'ai des mangues fraîches, combien de mangues 1 ou 2 ?

je dirais 2 mangues plutôt ! (cela permettra de faire et l'insert et le glaçage miroir)

Salam Rahma. Tu as un savoir-faire incroyable en pâtisserie, en particulier pour les bûches. Je suis admirative! Si tu les vendais, et je pense qu elles se vendraient comme des petits pains, surtout en cette période de fête, je serais ta première cliente 😄 Et ici l insert est parfait😊 Moi aussi je dis waouuuuh 🤩🥰😘

Oh merci Djamila 🥰 J'adore faire des bûches, c'est peut-être mon truc préféré je crois. Ca m'aurait bien plus de vendre des bûches d'ailleurs, mais comme il y a de la crème il faut impérativement un CAP pâtissier (enfin en France) alors bon .... passer un CAP juste pour pouvoir vendre pendant un mois 😊 Peut-être que si je retourne un jour vivre au Maroc, je ferais ça en plus de mon activité (car au Maroc il n'y a pas d'obligation de diplome pour faire ça), vraiment j'aime beaucoup faire ça, et je reste zen en les faisant (pas comme les layer cakes par exemple où je ne suis pas hyper douée). Breffff, je m'étale. Et oui pour l'insert, c'était nickel ! Ouf !

@lachoufamily Je ne savais même pas ça, c est tt de même exagéré ! Donc il y en a qui peuvent vendre des pâtisseries dégueu en ayant un CAP et pour les personnes qui ont réellement un savoir faire, ce n est pas possible 🤦🏻‍♀️ En tt cas, si tu en as la possibilité un jour, ici si les choses changent ou au Maroc, ce serait top 👌🏻

@@djam0808 oui moi aussi je trouve que c'est dommage (pas que pour moi, mais vraiment plus généralement, tu fermes la porte à beaucoup de personnes autodidactes, qui ont du talent et qui ne sont pas faites pour le systeme scolaire, ou encore qui ne peuvent pas se permettre de prendre 2 années de leur vie adulte pour faire un cap).
