20:34 George and Sol ... George is a typical Greek in that he has awful taste. When Marco confirmed the ingredients being used as 'tinned tomatoes' and bought in cheese.' George readily, almost proudly agrees. He hasn't a clue of Marco's slight condescension. I've worked for several George-types. The eateries run by them usually have one good dish that they trade on, without changing the menu, for years. He and his son are nice guys, but they living in another dimension if they think their food is contemporary.

Marco was taught by some of the best chefs in the industry. He knows that nothing should be on the plate that you don't want the customer to eat. Everything on the plate must be editable, and everything should go together with all the other ingredients. Me personally, I hate when I see things on my plate that are inedible, that are there just for decoration. Its pointless. And I know that type of thing doesn't impress marco either.
