He was staging at NOMA. The restaurant referenced in the first episode that Carmey worked at. Richie was holding up the binder and then later Marcus found Carmey 's awards folded up inside. That was the real restaurant but it is closing again at the end of 2024. They do innovative Nordic cuisine. They have closed before and done pop up locations then reconfigured the Copenhagen into something new and different.

Marcus was staging (said like it's french), which is the same thing Sydney was doing at The Beef in the first couple episodes of Season 1. Staging is when you go to temporarily work at another restaurant, generally for no or very little pay, and can be for a few reasons. It can be kind of like an extended interview/trial on the job like it was for Sydney, or in this case Marcus is just going to learn. And you were right that Luca and the boat were both connects from Carmy.

It is possible you better understand the concept from future episodes you have watched or just your own research since watching this episode, but, Marcus was staging, which is basically like a food service industry version of interning, as far as I understand it. You get the experience of working at a different restaurant/bakery/cafe/etc and their work culture, techniques, and way that they combine food into dishes. As far as I understand from my brief experience listening to chefs and wait staff talk about the experience that the process of staging tends to be a lot more informal, open, fluid, and loose than internships in other industries and combines aspects of a brief apprenticeship and the potential for a trial period for gaining employment at that place. Anyway, I am not in the food service industry, but that is what I have gleaned about that role from watching the Bear and then doing my own research about the role.
