I'm Jamaican, & it's amazing to me how much this recipe is like *our* chicken soup, which is basically a sancocho! (Or our beef soup.) I first had sancocho in Bogota, Colombia, & theirs is a little different than the PR one, but not much. The Caribbean cooking thing is so related, from Jamaica to PR to the Dom Rep. Love it.

It is similar but the main difference is the tomato sauce. Jamaicans really don't use too much in any of our dishes.

This was one of the best sancocho recipes I’ve tried in a loooong time. Slight modifications made: - I seasoned the meat the morning of. - Used flat short ribs. - Made plantain balls instead of cutting it up. That was my least favorite part but I appreciated the texture it added to the stew. - Used annatto oil when cooking the ham. - omitted sazon and carrots. Thank you for sharing the recipe. 2 hours was worth the wait. Tip: searing/roasting meat your meat/bones for soups or stews make a huge difference.

Very easy to follow along and not a terribly long video. I'll use this as a guide when I try to cook sancocho for the first time this evening. I'm curious what my wife, who is Dominican, will think of our Puerto Rican version. Very similar but I do notice some key differences like their use of celery and a lot more mashed platanos to thicken it. Anyhow, I have a bias being Puerto Rican but I think ours is better, taste and presentation.Thank you!

I just started to get into using an instant pot and I think if I make the meats in a broth in the IP, the beef will tenderize quicker. Then I would add the rest and cook it on the sauté setting.

So, that’s actually the “sinew” - connective tissue that is attached to the beef. It’s stringy, silver and almost hair-like. As unsightly as it is, it’s normal! For further reassurance, everyone in my home has black hair 😂
