Thank you for watching and asking. We find that a "shallower" puck profile to have a higher taste quality and a cleaner overall experience. A deeper puck often generats a taste profile with a higher perceived bitterness. That being said a puck can be both too shallow and too deep. We recommend to stay within -2g from the basket size and work with a basket size that is as wide as possible. What kind of basket are you using for brewing?

But I need more Time to make an opinion haha. For the moment I really enjoy your style of shot , 20g basket, 19g in , ~1/3 ratio, less than 20 sec 😉 (high clarity, clean...👍)

@@jorisfassina3789That's great to hear. That said we often recommend to be at least 20 seconds, and a longer extraction could make a lot of sense as well. Faster than 20 seconds will indeed make for a cleaner taste experience. But you want it clean and high quality - hence we recommend aiming for a long contact time.

The basket used is the standard model that comes with the machine. The standard basket that you find in a Dalla Corte Mina home espresso machine.

Wow first resignation! 😱 Regarding the 45mm tools there are quite a few dosing cups for 45mm out and also dosing rings for example Normcore. VST also makes 45mm baskets. If you want a tamper something like a Happy Tamper where you can specify the diameter of the tamping surface. There should be a lot of tampers in that 45mm range as Breville / Sage also uses the same diameter. I appreciate in this episode about the tips on grinding coarser and having faster extraction.

@@coffeewithapril definitely depends on the coffee I generally start with 1:2 for medium roast or 1:3 for light roast with an extraction time of 15 seconds then chase flavour in terms of getting rid of dry finishes and looking for an acidic and juicy taste. I then fine tune using grinding speed (higher rpm for more fine particles which can improve sweetness or effervescence or reduce speed for faster flow and more acidity).
