I’m 67, grew up in small town in Indiana. Most relatives were farmers, w/ cooks who made everything from scratch & organic. I Still cook that way…my foundation. I grew up always making rolls. Since family was huge, w/ plenty of relatives stopping by, I had to make tons of rolls. Never put that much sugar, even in all I ever made. However, I always made two types. Regular rolls and what we called ‘caramel rolls’. A bottom pan of a pecan, brown sugar butter base, which were eaten w/ those big country breakfasts & held you over until the big holiday feast. Everybody has their own methods. To shape my rolls, I put dough in my hand & popped them up between my thumb & index finger with buttered hands. Went real fast for those hundreds of rolls I made.

I am 78, so I know what you mean. I was raised in the Deep South by a mother who learned cooking from her mother. It took me quite a few years to make Beef, Vegetable Soup, like my mother, but I finally did. I have passed on the recipe to my girls. My mother showed my wife how to make cornbread dressing and she has passed it on to our girls. The one thing that mother made that I have not been able to replicate is her hoe cake. I know what she made it from and how she cooked it but I have not been able to replicate the taste and feel, yet. I am working on it. It was made with Bisquick and milk, cooked on a cast iron skillet and was about 3/4” thick and had the coloring of a pancake. Put some jelly on it and it was a meal, in its self.

@@johnclarke6647 I lived in metro Atlanta for 35 years & remember having ‘hoe cakes’ hope same as you described. A Flatbread with ones meal - had it at this restaurant downtown. OMG, the best. My Grandmother fixed hot water cornbread. My Mother rarely fixed it. But, whenever I visited any one of her 7 brothers, they always fixed it. Again, that right touch & skill. Those staples were our life blood. I made beef vegetable soup w/ barley the other day. Hadn’t had it since my Mother made it. It has been divine !! I’ve lost most of these ppl & no family now, and during this time of year, their memory floods my soul. Can’t eat much by myself. But, I’m the freezer queen!! I’m moving back to fixing hm rolls, soups, etc., with food being so expensive & often eating out is an awful experience. I turn on some music from old, pull out those basic staples & make those jewels of my childhood. TY, for sharing your memories & have a wonderful holiday season. Blessings!!

@@dawnross644 Dawn, I grew up in Cobb County and my mother taught school in Cobb County. I remember the days of Rich’s and the Pink Pig and riding the shopper bus between Davidsons and Rich’s. All for a nickel. Try that now. The last time I rode Marta it was over a buck. My youngest daughter lives in Marietta and she won’t even go downtown. It was not like that when I was a boy. I used to ride Southeastern Stages from Atlanta late at night after going to a movie at the Fox.Theater, without having a .45 pistol in my belt. Not any more.

I haven’t read all the comments so someone else may have mentioned this. I am 87 so things were very different when I was a child in elementary school. The glue we used was called paste and was a flour/water mixture, I think it was called library paste. It didn’t actually hold well when we made our construction paper chains, they could break easily. Your warning to soak the bowl brought this to mind.😄

Allow room at the top for the rise. If the cling wrap is too tight, it'll inhibit the rise, and the roll will flatten out. But then, variety of shapes is charming, and 'perfection' of appearance isn't what you're going for. Love the recipe.

I'm super lazy now so I throw all of the wet ingredients into my bread machine, add the dry, and let it mix in the dough setting. That mixes it, heats it for proofing in the machine, lets it rise all in the one container, and will punch down and let rise again automatically. It will do that for a total of up to 90 minutes. Then I remove the dough and shape to complete the process on the baking sheet. Looking forward to trying these.

Great video! The salt in the butter is a preservative, if you don't use much butter and are concerned, salted butter won't go rancid ás fast. On a related note, of you don't use much dairy milk, if you sprinkle a little salt in when you open it, it'll stay fresh tasting longer. Not enough to taste it, I'm talking less than a teaspoon per quart. If I can get two or three days longer out of a quart, that's a plus... The difference between having gravy (which you're going to add salt to anyway) or not on my biscuits... Or homemade rolls!

Hi Darla! I know the feeling! Yeast can be a little intimidating but if you proof it with the sugar and warm water and see it foam, then you know you’re yeast is good, so that step helps. Good plan to practice a few times before Thanksgiving though 👍🏻 Let me know if you have questions along the way - always happy to help! ❤️, Marie

I love this recipe! It’s super close to my grandmother’s roll recipe, and it turned out just like hers. I use a dough whisk instead of a spatula and it makes my life so much easier. A started using my grandmother’s flour hack, too. I found an old school, glass sugar dispenser (like you find at a diner) but it has a large hole shaker lid on it. It is wonderful for lightly flouring my workspace to knead dough. Thanks so much for such a great video!

Hi Alana! Great to hear! Thanks for watching and for the lovely note! I love the sugar shaker as a flour dispenser! Definitely going to try that - what a brilliant grandmother you had 🥰 Thanks again for watching. Big hugs, Marie

I have never made homemade rolls but I’m going to give it a try. I’m making some today before I spring them on everyone on Thanksgiving. I loved your tutorial and how you mentioned it doesn’t have to look perfect to taste delicious

Great video! I make rolls all the time but I can never get them to be the same size. Your hack will really be helpful going forward. And, the last time I made them I did exactly what you did and used a smaller bowl and the dough rose up and got stuck to the wrap I had used to cover them, but all was well and the rolls came out fine - just not the same size, LOL!

Hi! So glad that hack was helpful! Makes it easier than trying to estimate each one 😅 Thanks so much for watching and taking time to leave a note - so glad to be connected ❤️, Marie

I love that you show how to do things the old fashioned way because as you said not everyone has a stand mixer and other appliances that people use to make their recipes. So thank you so much for when I see recipes that use’s appliances that I don’t have I think I lose interest as I am not good at knowing what to use instead of what you are using. I love your videos. I just found your Chanel a few weeks ago.

I just made these ! 😋 My husband couldn't wait for tomorrow to taste one ! I decided to make 'mini' rolls. (30 baby rolls in total) It took a bit longer to shape them, yet I know everyone will appreciate it. 🍁 Happy Thanksgiving !

Thanks for sharing❤️ I made a similar recipe but I baked it in a bread pan and added unsalted butter on top before and after baking. I love making these for Thanksgiving. I let my Kitchenaid do the kneading.

Hi! Thanks for watching! So you made it as one loaf in a bread pan? Someone was asking me about whether you could use this recipe for a loaf instead of rolls. Haven’t tried it yet but now I want to 🥰 Thanks for the inspiration ❤️, Marie

@@rhawknails55 I used a dough hook to knead the dough until it looked like it was ready. Unfortunately, I cannot add a photo of the rolls to this comment.
